What sort of lanagauge would help get answers and help best while travelling?
You can request special assistance from the airline that can escort you and help you with checking in for your flight, going through security, and getting on and off the plane. JFK and ATL are big airports and if you have trouble reading the signs you can easily get lost so having someone who can assist you through that process would be beneficial to you. Just go to the airline's website and do a search for special assistance and there will either be a form or a number you can call to request assistance.

Can I carry my watches? I have 5 watches which are gifted to me by my grandfather and I want to carry it abroad. Is it possible without the documents of purchase?
Yes, you can carry your watches. They are personal items and can be carried into another country. If you were carrying a lot of watches you might get questioned on why you are carrying so many watches as it might look like you are trying to sell them overseas. Since you don't have documents of purchase I would take pictures of the watches with a date stamp to show that you owned the watches before you traveled just in case you get questioned.

Can you put Apple tracker devices in your checked bag or will it gr open to check what they are?
An apple air tag is fine to put in your checked bag. I always put one in my bag without any issues.

Overpacking is a struggle for sure, even for me. Just make sure to account for any souvenirs you might want to bring back from Disneyland.
