  • The broad category or citrus fruits includes oranges, tangerines, lemons, limes, grapefruit, pomelos and kumquats. They are characterised by their segmented flesh and acid flavours, which range from delightfully sweet to quite tart. Though some citrus fruits are available year round, they are generally winter fruits grown in tropical and temperate climates around the world. When choosing citrus fruits, pick the heaviest ones, these will be the juiciest; and don't depend on colour as this is not an indication of ripeness, a fully ripe sweet tasting orange may be green in colour. And the thinner the rind, the juicer the fruit will be.
