Hi Joel, it's Mike Florence and I trust you and Whiskey are well. This is a SUPERB omlette. The Creme Fraiche works so well and yep, Gruyere just a great choice of cheese. There should be enough for six, so the pan in the middle of the table, nice and hot works well. Just remember not to use a steel knife in a non-stick pan. Enjoy your meal!

I‘ll want to make this for 2 and only use 6-8 eggs. It might work using a much smaller pan

Looks delicious with all of my favourite ingredients especially the Gruriere Cheese ... but a migthy quantity of eggs, wow, can I use less instead? 😊
It's for 6 people, so adjust accordingly, but reheated in the oven the next day it's still great!
