Having had a Blue Star cook top, I can say without question that it does not simmer or hold lower temperatures well and this is far more important than boiling water in the shortest possible time. My current, cheap GE Profile range has better temp control than the Blue Star.
Wolf is nice but the dual fuel is so overpriced.

Their simmer is only 500 degrees which is high compared to the others
