  • Delicious and creamy raw vegan chocolate without gluten, soy and refined sugar is possible to make at home. Only three ingredients plus thermometer (infrared or candy) and you're becoming a pro in tempering chocolate. And your family will say only THANT YOU for such delicious and guilt free treat :)

    100 gr raw cacao butter
    140 gr raw cacao paste
    50-85 ml natural liquid sweetener
    1 tsp pure vanilla extract
    pinch of fine salt
    With raw cacao powder:
    75 gr raw cacao powder
    175 gr raw cacao butter
    50-80 ml natural liquid sweetener
    1-2 tsp pure vanilla extract
    pinch of fine salt

I watched a session a while ago on America's Test Kitchen and found out a Serrated Knife cuts chocolate so much Easier than the normal knife you were using.     Hello, this video was a huge help for me ! You list two different recipes. One with cacao powder and one with paste. I noticed you changed the order of ingredients around between the two. Is it indeed 175g of cocoa butter for the powder recipe?

    Hi Olga, love the video. If I may it with cacoa powder do I add that at stage to of tempering, also once the chocolate is made will it stay hard outside the fridge and how long will it stay fresh for, not that chocolate lasts more than a day around me before eating. Kind regards

      My dear, I haven't found the BEST recipe for white chocolate bars. However, I teach how to make homemade white chocolate, raspberry, strawberry chocolate from scratch on this course: www.myplantcake.com/unicorn
      However, I use mentioned chocolate not as a solid bars but as a velour coating for cakes, like decorative elements (raspberry chocolate horn and white chocolate ears for Unicorn cake). So, as small elements, they taste good. But as a solid white chocolate bar, I will never offer it for sale :))) I hope you got my idea.
      And yes, I've never ate a good commercial vegan white chocolate without shite sugar yet. Everything is... not delicious. So, I understand your concern :)

    Thank you for your video. You mentions not to get any water on anything. If I use "In the Raw Sugar Liquid," which has water as an ingredient, as my liquid sweeter would that be acceptable?

    Best video on tempering chocolate I have ever watched. Thank you so much!!! How long do you recommend letting the chocolate sit before releasing? Also, after it sets, for storage must it be kept in the fridge or is it ok if you have a kitchen that is not hot? Have a great day!

      I leave chocolate for 1-2 hours in the fridge before releasing. If you tempered it correctly, it will not melt and you can leave it in room temp. But if you're not sure, keep in the freezer :)

      Same as for regular chocolate - dark place, 17-18C. with low humidity level. Shelf life depends on the storing conditions. Or simply store in the refrigerator up to 2-3 weeks (in the airtight container).

    Loved the in-depth knowledge and tips that you shared. Would like to know, is Liquid Stevia a healthy alternative for sugar apart from the options that you have suggested. If yes, can you please guide on what amount has to be added in this recipe.

      Just add on your taste. Different brands have different sweeteners. So, add starting from 10-15 drops, stir, taste and add more if needed ❤️ I’m not a big fan of stevia. But if it’s a healthy reason (keto diet), it’s an option.

      Hi dear Aleksandra, I honestly do not work with liquid stevia. It can be really very different in taste (it can be an extract when you need to add a few drops only, or it can be something like Lacanto Monk Fruit maple syrup when you can substitute it with 1 to 1 proportion to classic maple syrup). If you have an extract, add it according to your taste. Just temper the chocolate and add drops to the chocolate. Mix it, try, and feel if you want to add more.

    Hi! and thank you for your recipe. I've done it a few times and although it taste good is not as shiny and the snap goes way the next day after storing. I read maple has a 35% water could it be that is sesing the chocolate over time? could it be the way I storage? (aluminum). I have thermometer and I'm following temperatures for tempering chocolate. Again thank you for a great recipe that truly is simple and don't requires big equipments.

    Olga, thank you for the recipe! My room is very hot and I cant get my chocolate down to 29C (no less 34..). I put my bowl with chocolate into fridge then for few sec got the temp up to 31C. The result was delicious but melt in hands chocolate... What could I do with the temp getting down? Thank you! I used simple termom and cacao powder.

    Hie ,as soon as you reach the desired temperature (third temperature finding )you shift it to the mould immediately right ?also if we have to add something like caramel in between the chocolate then how do we add it ?

    Love the video! I tried the recipe but somehow the maple syrup separated from the chocolate, especially when filling the last molds. Could it be the temperature? I did not have a digital thermometer. Looking to try it again. Thanks!!

      It's impossible to temper the chocolate without thermometer :) Temperature is everything for this process. You just melt it. Next time please try with cacao paste and thermometer :)))

      @@MyPlantCake Thanks for your answer. I did work with a thermometer but it was not a digital one but dial thermometer so it takes longer to get the temperature reading and is not as precise. I will get myself a new thermometer and for sure try again.🙂 Have a great day!!

      Try using carob powder as it`s sweeter than cacao powder. I did it with 50g carob powder and it`s so delicious and sweeter ( as I like sweet as well :d )

    Hi olga , I wonder if I can use homemade concentrated sugar syrup instead of maple syrup?

      I use maple syrup as a low glycemic index sweetener with lots of vitamins and nutrients in its composition. I found it the most easy for digestion and less harmful for my body (as well as for my customers and their kids). If you don’t mind about healthy benefits of the chocolate, it’s possible to use even powdered sugar, high corn or fructose syrup in this recipe. And most likely your syrup will work as well ☺️
