I watch these videos on RUclips of tuna being cut. It is one of my favorite things to do and most of the videos I watch come out of Korea or Japan. I watched one yesterday of a 420kg tuna being cut by one man and it was perfect. He sliced the fish in each stroke of his blade with the large fat knife or the long one, narrowly missing the bone, never having to repeat a single slice. He never needed to run the knife back or have the fish chopped in pieces. This is the first video I've seen in a while that took alot of men to cut one fish all the while absolutely massacaring the tuna. I am honestly surprised by so many people saying how great they did. But maybe if I didn't watch these so much, I wouldn't know any different either.

$20k knives, makes a huge difference. This tuna is cooked from fighting it, this place probably doesn't specialize in tuna. Plenty of videos of Koreans doing just as good as Japan or China does.

There is a show on the National Geographic channel in the US called Wicked Tuna that follows bluefin tuna fishermen around and shows them catching this with rod and reel.

I wonder what they do with the cuts that are not so "prime" --I am sure nothing goes to waste. It would be interesting to know what dishes they do with the tuna that did not look at all appetizing to me. Tuna of this quality is so very expensive. I wonder how much that lovely meal at the end cost per person? Anyone know that answers to these questions. As a westerner this is so unusual.
