I watch these videos on RUclips of tuna being cut. It is one of my favorite things to do and most of the videos I watch come out of Korea or Japan. I watched one yesterday of a 420kg tuna being cut by one man and it was perfect. He sliced the fish in each stroke of his blade with the large fat knife or the long one, narrowly missing the bone, never having to repeat a single slice. He never needed to run the knife back or have the fish chopped in pieces. This is the first video I've seen in a while that took alot of men to cut one fish all the while absolutely massacaring the tuna. I am honestly surprised by so many people saying how great they did. But maybe if I didn't watch these so much, I wouldn't know any different either.

They need to learn from Japanese chefs how to cut the big tuna without falling apart

Would be interesting to see what each part of the fish is used to make. Do they grind the small pieces and make something like hamburger?

@@tomusa7941 ---- The worst tuna preparation I've seen yet. I've seen MUCH better on the floors of a fish market, using four foot long knives or Taiwan Tuna Knives or both. Clean cuts, no sawing. The guys in this video are the equivalent of burger flippers. And the tuna itself? Would anybody here eat that dark brown flesh? My guess is that the inside along the spine wasn't iced enough, got warm, and spoiled. I've never cut a tuna at all, not even sushi sized bites, so they're much better than I am, for sure, but they are not up to more than doing the best they can with what they got.
