Strangely, Mexico in the 1800's was very Francophilic (at least in the higher echelons of society), but the distrust of foreigners existed and even increased with every successive intervention/invasion. One of the main reasons for Mexican independence was a conflict on the privileges of those born in Mexico vs. born in Europe. Mexican historiography of the war (at least what I have read) treat the Pastry War as a prelude for the Second French Intervention, and tend to focus more on Santa Anna using the small scale conflict and battle to rebuild his reputation. Depending on the author and their biases, they will find the latter as something negative or positive (e.g., Would the results of the Mexican-American war be any different if Santa Anna wasn't in the picture?).
Santa Anna was a horrible commander but I’d argue the Mexican American war would have gone even worse militarily. He brought some very pathetically minimal semblance of centralism.
