I believe the algorithm is working well. I had no idea I was so interested in sausages or the production of said meats. 30 Duncan videos later, still here for it.

I bought the Quality Meat and Sausage book you recommended. You were right it tells you about 3 lifetimes worth of information on meat and even fish projects. Not a lot of recipes though I would like a copy of the 1001 recipes that should last me about 4 lifetimes of projects. Built myself a #32 meat grinder and a smoker temperature controlled convection with a home made smoke generator. It only took 3 years now it needs a work out. Thanks to you I started using the metric system it works better than pounds and ounces a lot better control. Great channel keep it up. Thanks

Duncan had a Matrix dejavu moment talking about the 1/3 beef. I was expecting Mr. Smith to come crashing through the smoke house. Looks like a real good cooked salami recipe from Germany USA.

I bought about 10 years ago a grinder from Peavy mart. The big one and its working great still. And I put a lot of animals every year through it .we are a big family and all hunt and rise all are own pork and beef .I don't know what they cost now but back then was 400 some dollars. If any one is interested in get one they are a really good grinder for your money.

Hey, good video as always .. I have a suggestion for your throat being sore take 3 tablespoons of honey 1 large clove of garlic minced finely and 1 teaspoon of freshly squeezed lemon juice mix it together and put it on your windowsill cover lightly the sun will melt it together and when it gets the texture of cough syrup to take 1 tablespoon and put it in your mouth and let it sit in the back close to your throat and soft palate it will melt and relieve some of the discomforts.. you can also add 1/2 teaspoon minced fresh ginger if you want some even better elixir when you have taken a dose just add more honey and lemon juice and stir .. it will kick butt on most mild cold symptoms ..I hope it helps

Good recipe, thank you! For this type of sausage, I usually cut about one half of the fat into very dice (while the fat is still semi-frozen). That way, I get nice distinct pieces of fat through the sausage that do not smear. Alternatively, grind the fat through a coarser (4.5- or 6-mm) plate. That also helps to prevent smearing.

I like a good salami. Good for sandwiches and on pizza .my smoker burned down doing bacon last winter. So nice to see these recipes that you can cook in hot water. Till I get my new smoker made.

Interesting take on salami
great series this month. a salami style sausage i can make at home, looks good
ANother greta video. Thoroughly enjoyed this as I had never known you could get cooked salamis. Although it did look like salamis I have had before. An old chef I worked with in the 70's would hand dice his fat for the salamis he made and not run them through a mincer. I don't know if that would work for you. Can't wait for the next one.

I haven't seen your latest videos because life is busy. As of the last 3-4 months I've been getting into making polish sausage/kielbasa. Watching your videos has taught me alot about sausage making I will continue to watch your content to keep learning. Thank you for taking your time to show us these very informative videos.
