ok on the real. chicago born kentucky raised. your chitown stuff is reasonably spot on. your catfish is mostly right. peanut oil yup- also the only way to fry chicken. catfish. bled overnight in highly saltly water. pull filets, from no bigger than 5 to 7 lb total weight per fish, works on belly meat too- dont forget to rebait hooks with guts and heads-. icecold no seasoning plopped somewhere to drain. while its still super wet roll and push into coarse cornmeal, back on the rack to wait. few minutes drop in 350ish oil, peanut oil that is, its done when it floats, drop two filets at a time, away from you, no rush. golden brown is my fav, some like it a couple more minutes- deep brown near burned on the borders, whatever. then homemade cocktail-is spicy- and tartar- boring but better- sauces. again safe to eat floating, but some want more, feel free to cut into tender shaped portions, but i never have. clean, fresh, good sauce if your one of those. side of my mamas coleslaw, redbeans, and corn bread.............. fuck i gotta get to making dinner.
Real Southern fried chicken is also made with buttermilk. The buttermilk makes the breading denser, I believe. You can definitely taste the difference.
yes and no, overnight soaking is to bleed the fish, nearly anything will work, saltwater is the most efficient, buttermilk works too, but really you wanna add bmilk to the the batter here if your gonna do it. better to make ranch and or husy puppies with butter milk, or serve ice cold with liver and onions before the catfish.

If anyone don't know the history behind the name hush puppies... many of the confederate soldiers had dogs with them and they toss those fried cornmeal treats and say "hush, puppy" so there you go

In Tennessee, white beans are a favorite side either in lieu of hush puppies/cole slaw, or alongside it (for a mega feast!)
