I think the inspiration is probably closer to Tomato-egg soup noodles that many Chinese people grow up with :) but then again she's using an italian tool for the tomato prep and there's an option to put parmesan cheese on the ramen lol
I ate 2 years ago in the same shop, the tomato ramen was delicious, very smooth and equilibrate flavor. If you want eat some sofistacate and healthy ramen, this place, it is your place! There're many branch in the downtown! All the staff there are doing very well job and the ladys there are very cute! I'll visit in my next trip to Fukuoka!
A comment for the japanese viewer, at 8:23 the lady uses a moulin. This is typycal tool to prepare the famous french potato purée, just cook well the potato, then put in the moulin and mix the potato as a purée, then add a nice amount of butter. Dont mix too long, it would not be as good. Then taste. do not forget salt and pepper. Delicious french meal !

韓国人です. 周辺にオープンしたお店が多くなかったので、たまたま訪れたのですが、びっくりしました。 トマトラーメン本当においしい！ 正直、期待していなかったし挑戦する気持ちでしたが、スープとチーズの調和が食べれば食べるほど中毒になる気分でした。 ラーメンの食感と太さも大満足。 福岡に行ったらまた訪問します！

You can see her scars from burns probably from cooking, she worked hard for it. Glad they can stand on their own at that age.

Whenever I go to Fukuoka, I visit this shop! I was first introduced to it in the ramen hall at Canal City. Best tomato ramen in Japan!
