      I think through good word of mouth and local clientele being well off with set schedules.
      A good weekly rotation of regulars probably does turn up a decent profit. It's not too many customers, nor too little.

There was a time in the US and the West in general that tattoos had a distinct stigma but now 1/3 of suburban soccer moms driving crossovers have full tattoo sleeves so it definitely doesn't have a dangerous or artistic person feel to it anymore.

      But i bet it isn't delicious at all in European terms. It's look like Japanese just eat salted mushroom cooked in oil. Is it delicious? No it isnt. Salted chicken with some cabbage? No it's not delicious. Ramen with some shallots and soy sauce and shrooms with soy sauce? It's not delicious at all. I think Japanese people just eat everything only salted and for them is delicious - for me what i've seen here nothing could be delicious because it's only raw ingridients cooked added salt or soy sauce and thats it. I want to visit japan but i think food will be tasteless as shit. It looks like they they eat tasteless food with some (not enough) salt and WOW what a taste it is. No taste at all. Even their sushi by european standarts... Yes maybe it's ok you have to taste different kind of raw fish. But you know how different kind of fish tastes? Like fucking raw fish. Added sugary soy sauce here and there on Nigiri oh wow. Tuna fat not fat or whatever? Lets grill it a bit - DOES NOT TASTE better at all just same fucking tuna why i spent so much on it? I mean i think japan people have 1000x more taste receptors in their tongue because i cannot feel it. I can't understand it. Everytime i watch Japanese video on food i just think it's tasteless as fuck. And i think im right.

      Seemed so easy to make too but also not something you could master on the first go the Japanese make cabbage so good to eat gahdamn the combinations and aesthetic of making foods you’d mostly never eat makes you change your mind immediately when seen

      The same people always gather at these kinds of restaurants. This makes first-time visitors or customers visiting alone feel a strange sense of alienation. In Japan, there are quite a lot of privately owned restaurants that are run as a hobby rather than a business.

    Thanks to your video and the Google Maps link I got to visit this shop! The owner is super cool and the food was absolutely delicious. I really liked that neighborhood too. There were at least 6 others that visited his shop that said they were there because they saw this video. Thanks again for highlighting these awesome places.

      From my bubble of the world id be scared to pull that. But that's cool. That's kind of like Bob's burgers but Asian style. His restaurant is small. His tattoo shop is small. And the bathroom is open to the public. His bedroom is the only thing private & it prob has a lock? Hallways prob have cams? Imagine that being a cool trendy place. It's prob 20 ppl max & has crazy hrs. Neighbors gotta love that. And they can buy alcohol there?! That's really civilized folks. I feel like the US could never. It just seems illegal. But then again, he could be doing worse.

    This is the kind of izakaya that I would frequent. The food looks really good and it is made right in front of you. It's an intimate setting and everybody enjoys conversation.

    I am from Spain. When i visited japan I have experienced this kind of shop. It feels like being at someone's house and he is cooking for you. You can eat light snacks, drink and talk with strangers in a small space. Very interesting. Thank you.

      Can't do it in America. They'll call the cops or report you. Even the neighbors here snitch people out. When jealously kicks in, it's terrible. Smh.
      You have to have a licenses for everything, take classes and pay for tests, and spend hundreds of dollars before being able to open a restaurant here or any small shops. People are quick to blackmail you or even try to sue you here. It's crazy.

      Also small business taxes are chill and eveeyone is happy to use cash. Japan is the most prosmall business country, puts the us to shame. In the US, if your small business doesn’t make $5m a year it’s a failure.

    Was recently in Japan two months ago and I got to experience a setting like this in person. One of the most personable and best food experiences I ever had. Japan is an amazing culinary culture.

    That’s my kinda place. Former chef (retired) and non drinker I would frequent this place weekly. The food looks bomb and I’m sure I’d have a great time.

    Every single thing he makes Looks so good. That is a hidden amazing spot. Doesnt get crazy busy which is perfect for the space. Loyal customers, its just the best kind of place.

      For customers it's amazing. Usually these kinds of places can only exist though because the owner works his ass off with little to no profit and no free time for himself. As he mentioned in the video, financially it's a struggle

    I've done pretty much like this before..at my apartment complex..its nice because you don't have to worries about shop fees,.. cost saving there..hehehe..because you do your business at home but I only do it about a year and a half because the neighbors complaining about noise and smell of my cooking..so I end up renting shop lots but watching this kinda bring me back to the old days..what a good memory

    What a brilliant little space and venture, I really hope it works out for him, he’s certainly got the personality and cooking skills to pull it off. I love how he cooks in front of his guests and in Japan they use different pots to present the food in - I’m a potter and woukd love to use my own pots to serve food and drink on a small scale!

    As a 51 white american with tats who knows almost no Japanese, this is the kind of thing that makes me feel I could move to Japan and not be lonely. I know Japanese people are lovely as a whole, and you can get around not really speaking the language, but the tats are a concern.

      move to tokyo and your language wont matter, even yokohama. Most Japanese under the age of 40 likely speak better English than you do, if not use google translate. It's how i got around during my year in Japan. Truly a heavenly place, especially during the cherry blossom festival!

      Living there and visiting are two VERY different things. If you visited you would be fine, even if some people might look at you funny. (Still avoid the police if possible, they are dicks to tough looking foreigners)
      Now living there? I recommend looking up some English speaking expats here on RUclips. Chris Broad (abroad in Japan) is a good start, no nonsense fellow.

    This is exactly the kind of place I'd seek out and eat at if I got the opportunity to tour Japan. The chef looked like he knew what he was doing and his customers are the kind of people that would probably teach you to swear in the local dialect and show you more cool spots to eat and drink.

    It's this sort of content that is the quintessential example of charm and skill/craft that I love to see. And, naturally, it comes from Japan which I 100% respect the Japanese for their quality, discipline and overall view on life. As a Westerner, if given the chance, it would be an honor to be able to visit, experience and interact with these kinds of owners in their establishments if I got the chance to within my lifetime.

    Oh God, everything about this place is like the Midnight dinder series, it's like it came out of a manga, from the vibe of the owner to the cozy atmosphere of the restaurant, I always wish that when I retire or get old, I will open a cozy place like this. When I have the chance to travel to Japan, I will definitely come to this restaurant.

    We have a tattooed chef who isn't being put down or stereotyped as yakuza, some other guys that seem to be like him, & a few gaijin (foreigners) not being treated as second-class every move they make? This is like, everything Japan doesn't seem to want you to know about how awesome it can actually be to be there. Love it

    4:38 鍋より大きいガラス蓋を使用するのはかなり危ないので素人の視聴者さんたちはマネしちゃダメよ
    この手のガラス蓋は耐熱ガラスではなく強化ガラスでできているものが多いので、突然「パーンッ!」と粉々になる可能性があります。
