Mike, your video series on the food in Singapore is probably the most LEGIT series of videos I've seen. The way you describe the food, the aroma, the texture, the fragrance, and the flavour. You get it! You most definitely get it! I mean... I've seen videos from big names come down here to taste our food, like Anthony Bourdain and Gordan Ramsay. They showcased our food and sang them praises, but you... you just GET IT! I only wish I had followed you on your other social media, I didn't realise you came down here! Also, you really managed to cover almost all the bases! From Bak Kut Teh to Briyani to Chicken rice. You definitely did all the homework, and were rewarded with some of the best dishes we have to offer the world! Love from Singapore!
your question as to why the Hokkien Prawn Mee is so delicious? The secret lies in the broth which its been cooked... all the fresh prawn heads are broiled together with pork bones and some shops do place dried cuttlefish for the extra kick... so when the stir fry the noodles on high heat they will add in the broth too thereby enhancing the flavours and when the noodles is about done they will cover it with a huge bamboo pan cover to allow it to simmer for like couple of minutes so that noodles will soak up all the broth and give u that awesome umamai flavour... But there are better stalls around depending whether u prefer drier or wetter versions of it...

It's just that certain food have been given their own Singaporean "flavours". So you see the Singaporean hainanese chicken rice is pretty different from those in China.

I am so so glad that you did *not* touch Newton Circus Hawker Centre...the one place every tourist seems to go due to all the tourism guide books. It is an overpriced tourist trap where few local go. As you can clearly see in this video, Singaporeans vote with their feet, so if you notice a hawker centre or stall having more tourists than locals, you know you need to go somewhere else! :D

OMG that fish ball soup surprise that you are talking about was literally my first experience with Singaporean food, and what makes me missed Singaporean cuisines a lot, it's just food heaven there.
Awesome! I recommend you check out some of our local food blogs (Ladyironchef, DanielFooddiary are pretty reliable) for recommendations on what stalls/restaurants are worth it. Or ask any local friends if you have. Singaporeans are real passionate about food!

I used to live in that HDB complex for a year. There were 3-5 hawker centers within the area. One opens for breakfast (imagine S$2 BBQ + Roast Pork Combo at 5am), one opens until midnight, and one opens 24 hours where we used to watch live soccer match while enjoying some pratas or congee with beer. That place is FOOD HEAVEN mate!
Singlish is not really everyone's cup of tea to be honest. So, patience and understanding are really required if you wish to watch Singapore youtubers' videos.

The flavour is from the huge pot of prawn and pork rib broth boiled for hours. Did u spy the cook? He wears a pair of goggles cos his eyesight is affected by all those years of working in front of a huge wok.
Adeline Gan, Agree with you on the Nam Sing noodles! seems like the noodles weren't cooked long enough in the broth and I don't get why they don't serve sambal chilli! it's supposed to complement the dish! The one at Boon Lay has been there for a couple of decades if I'm not wrong. My personal fave is the one at Whampoa food centre.

Hey Mike, just wanna say that I really respect you as a fellow Foodie. A lot of these great stalls that you went to usually involve long waiting times. Only someone who really loves food would make the sacrifice! I'm afraid when I'm hungry I want food fast, I don't really have the commitment to queue for an hour xD and to travel from one end of Singapore to the other just to visit the best stalls... well, I'm sure you'd say it was worth it!

If we like a certain food from a certain country or place, we like it. And we will do anything to bring that particular food to our shores. Because in Singapore, which has no natural resources, we adapt. Heck, if the Martians have good food, they are welcome to bring us the food! We try everything! From Wolfgang Puck to Woodlands; from thousand-dollors Lafite to $3 Laksa. We try everyting. and all are welcome to Singapore to try everything! We even have vending machines that coughed out cooked gourmet and local food. Try it! We have instant mash potato at our convenience stores. Try it!

The fried noodles you had at the end is commonly known as "hokkien mee". And I totally agree. It looks so unassuming but is absolutely spectacular. My favourite dish as well!
As a Singaporean I did not realise how delicious the food here was until foreigners started showering praises upon food that to me only tasted "mediocre". Really eye-opening experience for me to appreciate the quality of food served here. Thanks for another video Mike!

Singapore style Hokkien mee is insanely good. Secret is the lard, the prawn and pork stock, and msg. Yum....... it's one of our unofficial national dishes (it seems everyone says chicken rice is the national dish)

My personal favorite Hokkien Mee, the yellow egg noodle with shrimps and cuttlefish...it is the broth that makes the noodle so yummy! High in calorie too .... darn... all tasty food ....

Be sure to go to the better food stalls! Not all food stalls serve food this good. Most are average.
I want to stay at a hotel in Chinatown and eat my way through Chinatown, then change hotels and move on to the rest of Singapore.

The fried noodles you had at the end is commonly known as "hokkien mee". And I totally agree. It looks so unassuming but is absolutely spectacular. My favourite dish as well!

As a Singaporean I did not realise how delicious the food here was until foreigners started showering praises upon food that to me only tasted "mediocre". Really eye-opening experience for me to appreciate the quality of food served here. Thanks for another video Mike!

You described everything I felt about hokkien mee since young. People always ask me what's the best thing to eat in Singapore, or what's my favourite hawker food. My answer has always been HOKKIEN MEE. So thank you, for describing what I feel about this amazing dish, and for introducing Singapore to the world :)

Singapore style Hokkien mee is insanely good. Secret is the lard, the prawn and pork stock, and msg. Yum....... it's one of our unofficial national dishes (it seems everyone says chicken rice is the national dish)

My personal favorite Hokkien Mee, the yellow egg noodle with shrimps and cuttlefish...it is the broth that makes the noodle so yummy! High in calorie too .... darn... all tasty food ....

Greencolouredpeas Yeah and mattar seafood is known for Chilli crab not salted egg. He also missed the pork satay dripping with fat and pineapple peanut sauce... but that's another stall with a one hour wait!
