Technically the term 'Asia' is a geographic term, not demographic or ethnic. The fact that in demographics has come to meant East Asia is probably because to the British who most likely came up with the term, that was the most away. Not even sure if Arabic, Hindi, Farsi or Mandarin have words for 'Asia'
