As a Jordanian, I eat shawerma Allllllll the time!! Your recipe looks so good😋.. And just to add we traditionally put garlic sauce : we cook water and corn starch until it is thick (like the consistency of a pudding) then we put it in a bowl and let it cool... Then we put in the mixer some olive oil, salt, 4-5 garlic gloves and the water and starch mix.. You mix everything until smooth and that's it! It taste amazing with shawarma and you can use it as a dip for chicken or beef 😋😋

The lemon juicing reminded me of a PSA I wanted to share: if you use one of those juicing tools, try putting the fruit in upside down, i.e. so the round end is facing you. It’s counterintuitive but I’ve found that I get way more juice out that way, especially with limes which can be stubborn to give up their juice.

Although this is not authentic at all (coming from a Palestinian). I appreciated the effort lol
Maybe next time use some sumac and Saj bread, add some picked pink turnips, And maybe make some toum instead of the yogurt. (Just garlic oil and salt. You can find tons of recipes online).
Chicken shawarma does not really use lettuce cucumber as tomato. It originally uses pickles toum and fries. Beef shawarma on the other hand does use tomato and cucumber with pickles too. Sometimes we even add hummus too!!

John, in Lebanon this is how we make it:
    - never add veggies to the sandwich, just fries and garlic paste
    - we don't cook the chicken with onions
    - we open the flat pita bread
    - you roast the sandwich to crisp up the bread before eating
    - pickles are added to the sandwich
    Hope this was useful :)

Is it a bad idea to marinade chicken in lemon juice overnight? Will it turn it to ceviche?

I will have to try this. The only chicken shawarma I’ve eaten is in Nigeria. They use a lot of cabbage and include a hotdog.

Do you think you could show us yoyr favorite meal to serve at Christmas at your dinner table. I'd love to see your table dressed-up for Christmas. This will be so helpful to me, & Im sure for others.
