I also prefer S-Log3., along with S-Gammut3.Cine.
With the Sony A7S3 I get good results without overexposing. In my opinion, +1.7 stops are not necessary at all. Joel Famularo (Phantom LUTs Arri Alexa) agrees. What do you mean?

The reason for over exposing Slog3 is to beat the noise floor by pushing it further down. A large majority of the detail is found in the upper half of the scopes in Slog3. It also completely depends on what you're using to transform back to rec709 whether it's a lut or a CST. You can do it however you're happy with, I just personally overexpose for those reasons and the color space transform seems to "agree" with that method. I hope this was helpful
