I never knew this I looked it up: VS stands for “Very Special”: only eaux-de-vie (spirits) at least two years old can be used to make a VS cognac. VSOP stands for “Very Superior Old Pale”: VSOP cognacs are created from spirits aged for at least four years. XO stands for “Extra Old”: XO cognacs are made only from spirits at least six years old.
The Napoleon is also a classification (though unofficial) with a minimum of 6 years aging. Often the V.S.O.P's will fall into this class if they carry a 6 year age.
The only difference between Armagnac and Cognac is the type of still used. The former is distilled in pot stills, which carries over the mash flavor more so, I believe, and the latter comes from a column still, which produces high proof, but less tasty alcohol, in my opinion, from the condenser. The latter, I think, depends more upon the aging barrels to give it the flavor.
Thanks for the clarification. In my experience, my pallette prefers a younger Armangac. The complexities of an X.O. are lost on me. All I taste is ultra-concentrated alcohol.
I like both equally. But one thing with Armagnac is when you just open the bottle it tastes bad but if you let it sit for 30 mins after then drink it, it’s way better
You got your "latter" and "former" mixed up... "Armagnac is column-distilled, which is a process where the alcohol is continuously heated between two vertical columns and then aged in French oak barrels or casks for a minimum of 1 year." Also, Armagnac is only distilled once, where Cognac is twice distilled.
A 75 yr old bottle would be very different from a bottle that was aged for 75 years before bottling. In other words, leaving it sit for another 75 years wont do anything to improve its taste.

I like Armagnac. Like absinthe, you need to get the good stuff...and it's best to approach it with a clean palate, though for different reasons. A good Armagnac has layers of flavor and a good Absinthe does NOT have the unnatural neon green of a lava lamp. It's pretty simple to separate treasure from trash with each, which makes buying a good one fairly straightforward.
I live in Detroit, and that was the funniest quote of this episode for me. Wasn’t expecting that as the answer to the question, “What would your French name be?” Hilarious indeed, Terence! 😂😂😂
Napoleon was average height. due to the difference in the French and British unit of measure the french had him at 5'6" and thew British had him at 5'2"

Armagnac is by far my brandy of choice. It has character, body, soul…and it’s robust enough to work well when cooking with it or mixing. It makes spectacular brandy butter and a very good brandy tonic. Calvados and Pommeau are really marvelous too. I confess though, my favorite way to use Calvados is mixed with a very good ginger beer - it’s like an elevated apple-y Moscow Mule, better in almost every way. Try it out!

Darroze, Dartigalongue, and L'encantada are generally better quality, more interesting brands that shouldn't be too difficult to find. I thoroughly enjoy watching your videos. Because you do so many alcohol/liquor taste tests, I suggest you invest in proper glassware. It would enhance the experience for the tryers.
It's funny seeing another country besides the US make fun of the French. I wouldn't say the French are losers or as Groundskeeper Willie calls them, "Cheese-eating Surrender-Monkeys" but I would say that the French are legendarily difficult and sometimes pride themselves as being such. It's a sense of pride and stubbornness they embody combined with a meticulousness that rivals the Japanese that has many times got them into severe trouble. Case in point: the French Knights at Agincourt, the Dreyfuss Affair, and the first year of WWI.
Part of the problem is that France remembers when she was the superpower of Europe, but that hasn't been true since the rise of Prussia, then later the establishment of Germany.
