    American-Style Irish Soda Bread
    INGREDIENTS:
2 cups (240g) all purpose (plain) flour
2 cups (240g) whole wheat flour
    2 tablespoons sugar
2 teaspoons baking soda (bicarbonate of soda)
    1 teaspoon salt
6 tablespoons butter, cut into small pieces
¾ cup (120g) of raisins or currants
    1 tablespoon caraway seeds
    1 egg, beaten
    1¾ cup (415ml) buttermilk
    DIRECTIONS:
    Gather your ingredients.
Preheat oven to 400°F (approx 200°C).
Line a baking sheet with parchment paper.
Place all purpose flour and whole wheat flour in a large mixing bowl. Add sugar, baking soda, and salt. Whisk all the ingredients together to combine.
Add in the cold butter. Cut the butter into the flour using a pastry mixer or a fork.
Stir in the raisins and caraway seeds. Add in the beaten egg and buttermilk.
Stir until the mix begins to form a dough. Pull the dough together, taking care not to over-knead as it will produce a tougher bread. Sprinkle flour on hands and then pick up and transfer the dough onto the prepared baking sheet. Pat and gently flatten down the bread.
Using a knife, cut a cross into the bread. With a pastry brush, glaze the top of the bread with buttermilk. Bake in the oven for 35-40 minutes. Serve warm with butter.
NOTE: Can be stored in an airtight container at room temperature for 1-2 days or wrapped in plastic cling film and kept in a freezer for up to 3 months.

My grandmother, of Irish decent, grew up in the Bronx NY. She was born in the early part of the century. She made her Irish soda bread with caraway seeds and raisins. Delicious. 🍀
