🍋 Easy Easy LEMON DRIZZLE CAKE Recipe | Get Brilliant Results Every Time

  • This British classic is one of the easiest cakes to bake. So easy that I have added it to my EASY BAKES FOR KIDS playlist. This gentle lemon drizzle cake is the perfect accompaniment to a cup of Earl Grey tea in the afternoon, you can bake ahead of guests and it will keep in an airtight container for days.
    This recipe yields one large cake if made using a round 9 inch deep cake tin OR two cakes if using standard (2 inch height) round 9 inch cake tins. You can also use two 1lb loaf tins.
    INGREDIENTS:
    - CAKE -
    1 cup caster sugar
    1¾ cups self-raising flour
    2 teaspoons baking powder
    1 cup/16 tablespoons butter, softened
    4 large eggs
    3 tablespoons of milk
    zest of 2 lemons
    - DRIZZLE -
    Juice of 2 lemons
    ¾ cup granulated sugar
    - GLAZE -
    leftover drizzle mixture +
    5-6 teaspoons powdered (icing) sugar
    DIRECTIONS:
    1. Grease baking tin(s) and line with parchment paper. Preheat oven to 320°F (160°C).
    2. Into a large bowl, add self-raising flour, caster sugar, baking powder, softened butter, milk, eggs, and lemon zest. Beat with a wooden spoon until a smooth mixture is achieved. If using an electric mixer, I recommend one minute on a medium setting.
    3. Transfer the cake batter into baking tin and bake for approximately 35-40 minutes.
    4. When the cake is baked, take out of oven. Use edges of the parchment paper lining to carefully remove the cake from the baking tin and onto a cooling rack. Spike the cake surface using a skewer or a fork.
    5. To make the lemon drizzle topping, extract the juice of two lemons into a bowl, and add granulated sugar. Mix well. Brush the drizzle all over the top of the cake and allow it to fall into the holes.
    6. Use the remaining drizzle to make a thicker top glaze. Add powdered sugar until a thicker consistency is achieved. Thicken the mix with powdered sugar until the glaze falls slowly off the spoon or whisk.
    7. Pour the glaze slowly over the cake, use the back of a spoon to smooth it over the edges and allow it to pour off the sides. Leave to set for approximately 20 minutes. Dust with powdered (icing) sugar, slice and serve.

    Oh yum! I do love a lemon drizzle cake. I have never yet come across a version that I didn't like. I must give your recipe a try too. Purely in the name of science of course - nothing to do with my unholy cake obsession.
