- Rubbed (sweet potato greens) greens are so delicious, once you try them, you'll always want more. The work behind cooking Liberian food in general, especially potato greens is always tough, but its worth all the time. Not just because its tasty, but because it also has all the nutrition you need. Iron, Zinc, Folate, Protein, Fiber and much more.
As you'll see in this video, the typical meat of choice in a Liberian household are hard chicken, smoked turkey, sometimes chicken feet(paws), and since this is fried I added some fried fish..........

How long did you boil your meats before you put it in the greens
It depends on the meat. Fresh cut butcher meats like hard chicken should be pre boiled for about an hour other meats like chicken feet wings fish 20-30 meats. You have to check them frequently make sure it doesn’t get soft otherwise it will fall apart once you add it to green. You want to precook meats so that it’s not too hard and you won’t have to cook greens for long. The baking soda also helps to soften greeens and make them less rough.

It's called Pompano..I've only seen it mostly at Asian stores

The baking soda shouldn't be a problem. But you can start with 1/4 tsp if you're worried about it and see

You don't really need the baking because it softens the greens just don't add too much liquids.

Do you clean the frozen potato leaves the same as the fresh?
I clean the greens when fresh, cut, steam, and freeze. After that you can't wash them
I think I put to much liquid from the meat into the potato greens and it’s not drying, can you tell me how I can make them dry? Also think you for this recipe
Hey Kyisha, you'll just need to be patient and let it cook down in this case. You can also increase the heat a little bit

thank you for getting back to me on that! We were in Liberia a few months ago visiting some friends, that was where we had this lovely green potato stew on white rice. ( it was like heaven on earth ) we looked for this meal here in london, but only Nigeria, Ghana, Senegal,and Sierra leon restaurants are here, and they all cook similar dishes, or something close to the British palate. we will try to cook it at home following your recipe.

@@ThinkEagle7 the soda helps to soften the larger cut size. Plus it's just a different version of fried greens. The soda is not necessarily a need
Your son is a Liberian even if he was born here. He hasn’t had any Liberian food because you mentioned that you want him to experience Liberian food.
