If Spice paste is filled in Beigan before frying probably will come out better. My friend she is originally from Haydrabad she use to cook all spices were same except she modified with 2 tsf with Peanut but, here in USA. Best Haydrabadi Cooking. Thanks.

I enjoy watching you cook but why do you sprinkle in so many English words in your explanation. If you are speaking in Hindi/Urdu you are corrupting this rich language by your kitcheree commentary. All ingredients words are found in Hindi and Urdu. Please don't spoil our mother tongue. Thank you.
Too much oil.frying is not good for health. U should tell us some other way to cook. All the goodness of baigan have been probably lost while frying in oil. Oil , oil, oil......uuffff.....

I agree, though with a gravy based on nuts and seeds the deep frying hardly makes a difference.
Can always cook the eggplant in the microwave to avoid frying.
