    बैंगन भरते को अगर चूल्हे या कोयले की सिगड़ी पर भुना जाए तो इसका टेस्ट कई गुना बढ़ जाता है। इसमें फ्रेश मटर के कुछ दाने और अगर हरी प्याज की बारीक कटी पत्तियां मिला कर बनाया जाए तो उंगलियां चाटते रह जाएंगे। इसे आजमाइयेगा जरूर।👌👌👌👍

    I prepared baigan ka bharta too today for lunch, wish I had watched this recipe before cooking, hmm nxt week I am making dhaba style bharta. I love baigan ka bharta with rice it just tastes yumm, many ppl find it weird though. It’s mouth watering ❤

    In Madhya Pradesh we have a tributary of Narmada river called as 'Varman', a special green eggplant - bhata is grown around that specific region near jabalpur and it makes such an amazing bharta. I personally think that the green eggplant tastes better than the purple eggplant.

      Green eggplant is also grown in the Khandesh region of Maharashtra (Jalgaon, Idlabad). That region is famous for its bharta. Special dhabas and outlets have come up that only offer "Bharit puri"

    My favourite . I also do the same as my grandma taught me to peel out the skin when it is hot . And u know what we do we take the crown of the brinjal and mash it with that crown . It tastes yummy. Nyc recipe as olys.

    The only problem with this dish is that we can't find if there are worms in eggplant and we directly BBQ them and start preparing it. If unfortunate then worm ka bhi bharta banega 😂

    Jai Sitaram , Namaste Ranveerji! As always, very tasty recipes!!! Please dont laugh at me, but i make a muchhhh simpler and underrated version of baigan bharta....u may think im crazy but here's what i do:
    - roast baigans on d stove top( no cuts no garlic n no oil)
    - thn i peel iff d skin n mash the baigan
    - then in a saucepan i use coconut oil,i put onions and scotch bonnet peppers, tomatoes n salt...when the tomatoes soften thn i add the mashed baigan n saute it so tht the tomatoes n onions r well mixed in with the baigans...n thts it...lollll
    - i eat it with chapatis & n i slice cheddar cheese on the side... with sliced avocado salad n a slice of scotch bonnet pepper to "dip" when im eating for extra spiciness....
    EVERY1 ELSE I KNOW USE GARLIC!!!! but personally i like to taste the full blown baigan flavours with a bit of the tangy tomatoes :)
    I knw u may think im wierd but trust me, it tastes soooo goodddd...lolzzz

    One more recipe where we add coconut milk, tamrind pulp, green chilli , coriander and finely chopped onion to roasted baingan it also tastes amazing , I think one of the traditional recipe found in Maharashtra
