    10 corn tortillas
    Canola Oil
    Salt
    16 ounces refried beans
    12 ounces shredded Colby Jack cheese (or use other melty cheese, like cheddar or Monterrey jack)
    Pickled jalapeno peppers for topping
    Diced tomato for topping
    Crema or sour cream for serving

    I've been making West Texas (San Angelo) nachos for 50 years. I'd make them for my dad and I when I was a kid. I used Doritos back then but use restaurant tortilla chips these days. I make them now with Tortilla chips, *sometimes with good lard beans, Longhorn cheese, a thick slice of fresh jalapenos and salt and pepper. I also use either habanero or ghost pepper flakes for some extra flavor and especially heat as jalapenos are very rarely hot anymore. I make nachos 2x a week. It's a perfect finger food and they're just damn good! 🤤
    Sonoran spice company has awesome pepper flakes. I use a lot of their habanero, ghost and Trinidad Moruga Scorpion flakes.
    Another great spice i use a lot of is Anthony Spices Arizona Habanero spice. It has habanero, salt, rosemary, thyme and other herbs and spices. Be blessed!

      @@ChiliPepperMadness if you haven't tried the Anthony spices habanero before I highly suggest you do. It's a great replacement for salt and pepper. ✌️

    I'm thinking these could be done in the air fryer too! As a Texan, I'm thinking pico, guac and crema when served would be perfect. Nachos are the best..

      I like to just spray the tortillas with some avocado oil and pop in the oven for 10 mins or so as the first step. works good, and less oil used.

    OMG! What kind of sorcery is this?!!! I put a lot of effort into making sure that my nachos are layered properly but they still get stuck together and messy - this is brilliant! If only had had known about this before the Super Bowl I'd have been the Nacho King!!!

    Being from Texas we usually use the smallest round tortillas we can find (about 3” in diameter) as the ones you made are more our old school home version, but typically it has grilled fajita meat on top of the beans covered with cheese and dressed the way you want it … still, your version reminds me of the 70s/80s (and that’s not a bad thing)

      A “trick” on frying is using an infrared thermometer to check the oil to 350 degrees and fry the tortillas for 30 seconds per side

    I love the fact that you're constantly offering variations/adaptations/subjective tweaks to your recipes. Besides being useful, it's the sign of someone who's actually a master of their craft, rather than just someone demonstrating a stock recipe.

    I have been making these for years. Try mixing the refried beans with some salsa. Then do the layers. Love the channel.

    We used to make those in the early 80s in east TN.
    Before Mexican restaurants were ubiquitous, Tortilla Flats opened. Cool dude from TX opened it. Had a green chile sauce that it took 5 days to make...we almost I.V.'d that stuff!
    Wife and I still make em this way...have never seen it made this way since the days...

    There's a local place in El Paso that sells them just like this with a bit of pico and guacamole in the center of the plate. I was always more of a loaded nacho fan, but I was converted to these because they're so good. Sometimes it's better to keep things a bit simpler.

    Usually I don't fry tortillas. It is a bread that contains fat and that fast will do the job to crisp them up. All I do is put them on a baking sheet, no oil no nothing, and cook them in the oven. They will brown up and get crunchy. And it is healthier too.

    Not Texas-Style as much as it is Almost-Out-Of-Tortilla-Chips-Style. I'm in Cali and have been doing this my entire life. I may only have 8 tortilla chips left in the bag, but dang it, I'm having Nachos! Cheers!!!

    I was born in Texas but now live in California, I have eaten nachos this way growing up. I made these once for my spouse and she thought I was insane to make each individual, now she won't have then any other way.

    This is the only way I’ve ever made my nachos. I don’t know when the messy, dumped nachos started to come into being but I am not a fan. To me, this is the only right way!

    This is one of my favorite ways to enjoy nachos. Getting everything together on a plate becomes annoying once you get halfway through because the cheese is on top and everything below it starts to get soggy. Unless they are assembled in multiple layers. That helps. But this is better. I used to get these at Chi Chi's way back when. Chilis has a version that's pretty good.

      I make them with tostadas. Just snap them in half. Very good.

    Make sure you buy the non GMO poisons tortillas.
