Sweet&Sour Pork Donburi| MASA's Cooking

    里脊豬肉 Pork loin-170g
    鹽巴&白胡椒 Salt&Pepper
    麵粉 Flour-1大匙
    洋蔥 Onion-1/4個
    蒜頭 Garlic-5粒
    高麗菜 Cabbage-100g
    黑木耳 Kikurage-2片
    生辣椒 Chili pepper-3支
    豌豆 Snap peas-5片
    鵪蛋 Quail eggs-6粒
    日式高湯 Dashi-50cc
    紅糖 Sugar-1大匙
    醬油 Soy sauce-2大匙
    番茄醬 Ketchup-2大匙
    米醋 Rice vinegar-2大匙
    太白粉 Starch-1大匙
    水 Water-1大匙
    白飯 Steamed rice-1碗
    Preparation
    (1) 100g of cabbage, chop into pieces
    (2) 2 kikurages (Black Fungus), chop into pieces
    (3) 5 snap peas (blanched), slice into half diagonally
    (4) 1/4 of onion, chop into pieces
    (5) 5 cloves of garlic, chop into pieces
    (6) 3 chili pepper, slice them into half horizontally. Remove the seeds and slice chili pepper into sections
    (7) 1 pork loin, cut into small portion
    (8) Put the pork loin into a plastic bag, season it with salt and pepper
    (9) Move the bag a bit to coat the seasonings on the pork loin
    (10) Add 1 tbsp of bread flour
    (11) Mix the content well
    Sweet & Sour sauce
    (12) 50cc of dashi
    (13) 1 tbsp of brown sugar
    (14) 1 tbsp of soy sauce
    (15) 2 tbsp of rice vinegar
    (16) 2 tbsp of ketchup
    Starch water (for thickening the sauce)
    (17) 1 tbsp of starch
    (18) 1 tbsp of water
    (19) Mix (17) and (18) well
    Instructions
    (1) 1 tbsp of oil
    (2) Put to medium low heat
    (3) Add pork loin and fry until golden brown. Take them out first.
    (4) Add onion and garlic, fry until translucent
    (5) Add kikurage & pepper
    (6) Add cabbage
    (7) Add combined sauce
    (8) Add pork back into the frying pan
    (9) Shut off the stove
    (10) Add starch water and mix them well
    (11) Turn on the stove again
    (12) Add snap peas
    (13) Add 6 quail eggs
    Plating
    Put the dish on top of a bowl of steamed rice

      適當的糖可以提味😋代糖的成分比糖本身更多負擔喔😅

      不是這意思,是看MASA老師其他料理都會加點糖(白糖和紅糖),所以想請教老師可以用甚麼代替糖。
      我不用代糖,也很少吃精製糖。
