Since our videos are intended to be educational and not entertainment we feel we would have to leave out important information if we make them shorter. This would leave people without enough information to actually make the recipe, which is the goal of our videos. So we have no plans to make shorter videos, sorry.

Yes. No change required. Love your videos for so many years. So natural, selfless & it's ok that it's not perfect sometimes, what's most important is the end result is good. Thank you so much for your guidance, you're a great teacher😘.

Just gotta say that through the years I always come back to this very baked cheesecake recipe! It comes out perfect every time and I think the video is great and informative, especially when she gives the gram conversions as well. Plus the little tips she gives and the reasons why just clears up so many misunderstandings that new cooks might have about this recipe. Please never remove this video from RUclips! ❤

Edit: Most people have learned to stop saying stuff like that. Glad the comments section has changed for the better. Damn fine cheesecake

Made this cheesecake and everyone loved it! I put a little too much lemon zest but no one complained. Sent a piece for a friend yesterday and this was the message I got today: “Heyyy was calling yday to tell you thank you so much for the cheesecake. I absolutely love it 😍 Not even trying to mamaguy [to deceive with flattery] you here. I would pay money for a cake like that. The crust and lime flavor...sooo freaking good! Thank you for including me in that wonderfulness! 😁”.

Stephanie's lack of smiling in this video has nothing to do with the joy (or lack thereof) of baking. This was one of her early videos and one of the more difficult recipes to remember and explain. Shooting a video without stumbling, remembering every ingredient in both US and metric is and everything that she needed to say is quite difficult. You'll notice in later videos she smiles and is more animated as she got the hang of it.

Really tasty recipe! Tried half of this recipe (halved everything else except for the crust - I still used the exact amount; eggs, I used 3 large eggs; And the vanilla, still used 1 teaspoon). Divided the crust and mixture into 2 (8") regular pie pans. Baked the crust for 8 mins on 350F, Baked with the filling for 30 mins; baked with the sour cream for 5 mins. Came out delicious and everyone loved it. It was a bit thin though, so I'll try this next time in just 1 pie pan and use half of the crust. Thank you for this, you're such a blessing!

OMG how easy was this and what a WOW factor when I presented it at a dinner party last week. It is a wee bit time consuming but not difficult, I really impressed myself at my abilities, given that it was my very first attempt at a baked cheese cake. It was commented on that "how did you get it not to crack" I was delighted.

The fist time I only put 3 eggs in it and a half cup of sour cream to balance out the missing eggs. It turned out great! The second time i followed the recipy to a T and it was also great. Not a single crack! When the time is up, turn off the oven, open the door and let it cool in the oven for 3-4 hours

I am not a baker at all and this was easy to follow along and make. By the way people, do make the sour cream topping, it really goes well with the cake, plus when you cut into the cake you can see the white sour cream layer on top of the cheesecake and it looks so presentable. The combo tastes delish! Thank you Stephanie for this great recipe!

That mixer is amazing in its size. What brand is that, and why are you using it instead of the standard Kitchen Aid mixer that everyone seems to use? Also you are scraping the bowl far more often than is necessary with the Kitchen Aid. Just wondering. Thank you Stephanie.

Joy of Baking ,

Love all your receipes. I’m glad you said. You can use digestive biscuits as we don’t have graham crackers in Australia.

An excellent New York style cheesecake is a task I've been working on for years. I followed your video, and the tips and tricks make for a PERFECT cheesecake. We've just taken the beautiful result out after an overnight cool down in the fridge and it looks like something from the best bakery. The texture and taste are absolute perfection. I did add a 1/2 teaspoon of almond extract in addition to the vanilla. Made the taste outstanding. Thank you for your great video!

As much as I agree she don't smile, she gave us hope in baking and that brings about joy in it. Stop complaining and learn what she has to offer. It'll do good to you and everyone else. Cheers!
