Made this cake 2 days ago it is AMAZING! I personally preferred it after just a few hours in the fridge when it was still soft than the overnight texture to it but still amazing either way. Froze most of it before I finish it myself :) Nice to have for my next chocolate craving... Thanks Stephanie keep up the great work you are the best.

I made this cake for the 2nd time now. I didn't change much, just +25% ingredients for a 28cm springform, and adding a pinch of cinnamon to both the chocolate wafers and the cheesecake filling. I used chocolate with 60% cocoa, presenting the cake to a big crowd of people. All loved the intense chocolate flavor, combined with the tartish aroma of the cheese. It is a decadent, delicious cake - overwhelming! For Germans: Use "Schmand" for sour cream.

if you dont likr eggs . you can.make a cheese cake withiut them. only use cheese whipped cream icing sugar and some vanilla extra and you can add.melted chocolate
Wow this is the best cake I've ever made. Great recipe great directions excellent job. I only had one problem my cake seem to collapse after I took it out of the oven. What can I do to avoid that next time?

Thank you for your kind comments. I'm mainly self taught. The only class I have taken is a week long patisserie class at Le Cordon Bleu.
