The word "spirits" in distilled beverages actually comes from the actual processing of the liquids turning to "vapour" or "gas", going up the steaming pipe, and back on the other side as "liquid" again...but now as "purified" liquid. ... Solids+liquids > Liquid > vapour/gas/steam > purified liquids > flavour/distillation = SPIRITS

One interesting thing I learned about the history of Gin is that it was originally created by monks in the Middle Ages as a Plague medicine. And of course, over time, it started being treated more as a beverage than a medicine.

Slight correction on the St. George vodka: they use a non-gmo corn neutral grain spirit base that they blend with some of their pear distillate.
