Is it truly the case that we need to have natural ferments for sacramental wine? If the yeast will not be in the chalice in the form of sediment, then what would the the difference between a natural ferment and one with brewers yeast in terms of substance? I don't know whether it would violate Canon law either, but the monks at St. Tikhon know better than I.
I think all *safe* wine uses yeast that exists on the skin of the grape. I've heard of bacteria that produces alcohol from sugar but it's obviously dangerous for consumption
And look back at any of the previous masses from Balllinrobe!!! We really do live in the land of Father TED!!! Priests here are very much more into their Image!!! Bishop Casey in Galway was a clear case of that!! Careeer Priests and Bishops..NOT bescause they had a "calling"!!!
What may have started as an innocent idea seems to have gone odd: I could be served any wine at mass - it becomes the blood of Christ. What came before is lesser by definition.
Isn't saying the wine becomes His blood the false idea that the blood *already* shed on the cross wasn't enough? Jesus doesn't need to shed His blood over and over >> again. It only took the 1 Time.

He also skips readings and never does the creed!!
