Fun fact the first baked ice cream was introduced in 1875, at Delmonico's in NY City. It was called Baked Alaska, and it was named in honor of The USA's purchase of Alaska from Russia.

Technically Baked Alaska doesn't need to be baked unless you bake your own cake. Otherwise just buying premade cake is the standard way of makin it. The meringue is either torched or broiled giving it that baked look. This is my all time favorite dessert, it just takes a lot of time to make it.

Usually you don't get an entire banquet of fried food. Jolly's british stomachs are probably more than a bit overwhelmed. The s'more is probably better than they say, but after an entire deep fried meal, it is basically a mouthful of deep fried sugar. My favorite on this list is the deep fried ice cream. But my favorite deep fried fair food is funnel cake, no sauce, just light powdered sugar. The deep fried pickles are also delicious.

Deep fried ice cream at its heart is a scoop of ice cream and a shell of corn flakes. You are dipping the whole thing in hot oil briefly to harden the shell and ice cream can’t melt. Dust with cinnamon sugar and whipped cream if you like. Tex-mex has this all the time.

There's really no big secret as to how these cakes, Twinkies, even the cookies are prepared for being fried:
Most of these things are portioned out and then kept in a deep freezer (less than 0 degrees F) then fried from frozen.
It's not really a secret because a few years ago there was a booth at the State Fair Of Texas where they gave away the 'secret' - that if you have food that's completely frozen, then batter it and toss it into a deep frier, you'll not ruin the food inside the batter.
However there's something maybe not good about the booth where these guys purchased these items and it's my guess that their deep frier wasn't holding the oil at the correct temperature because they all described these fried treats as greasy when really they should be crispy not where you can feel the oil on the cooked product.

The fried ice cream works oddly on the principle of thermal displacement. If you throw frozen solid ice cubes in boiling water it barely melts because the cold can’t move to hot that quickly. But throw them in the fridge and the ice melts rapidly as the cold temperature absorbs thermal energy better. It’s an old physics principle that we had to figure out. Alton brown showed this idea once by chucking ice sculpture ducks in various thermal situations and the fridge melted quickly while the oven and boiling water were untouched.

First time I had fried ice cream was in a Japanese restaurant (in Montreal, that my cousin co-owned) probably over 15 year ago. Shortly after I started noticing it on other Japanese (as well as some non-Japanese) restaurants' menus. Since then it's can be found in all kinds of restaurants.
There's a few different ways it can be made but the common step is that you have to make sure your ball of ice cream is completely frozen solid beforehand.
One method is that you can roll the ice cream in a good coating of corn flakes, breadcrumbs mixture or panko mixture (while it's still slightly soft to make sure the coating sticks well), freeze it completely and then when you want to eat it, just deep fry it very quickly. You can make many ahead of them and store them in a container in your freezer until you decide to fry some.
Another risky method is literally to take your frozen ball of ice cream, quickly dip it in batter and deep fry it.
The easiest way (which was the first version I ever tried) is to wrap your ball of ice cream in a thin crepe and - again - deep fry it quickly. You can also make these ahead of time and keep them in your freezer until you want to fry them. The crepe is thin enough that even frozen it'll fully fry before the ice cream has time to really melt from the hot oil.
And key lime pie can be a bit of an acquired taste I've heard. I vaguely remember having it once before (I figured I'd like it because I was fine with lemon pie) and I wasn't a fan. I did wonder if maybe I just had a mediocre version but I haven't eaten any key lime pie since so I wouldn't know. 🤷🏻‍♀️

All the deep fried ice cream I’ve had have been battered and fried.
There seems to be a common thread on being associated with specific ethnic restaurants. Here in the states it’s Mexican, as Ducky told them, one of the comments there said what it was in Australia, and you say Japanese restaurants in Canada.
My grandmother liked key lime pie, I don’t particularly care for it. Not that it’s bad, it just doesn’t spark for me.

@@JustMe-dc6ks to be fair IDK about how fried ice cream "started" in Canada but that's just what I noticed with my personal experience at the time. I grew up in a Vietnamese household with immigrant parents who tended to prefer Chinese and Vietnamese/South East Asian restaurants so my restaurant experience was mostly limited to them (and some fast food) until I was in college and was able to start exploring more cuisines. I didn't have my first sushi, avocado or nachos until I was like 17-18 despite being born and raised in one of the biggest multicultural/ethnic city in North America! 😅
I do know that among the people I knew, many of them were shocked by the concept of fried ice cream whenever I'd mention it at the time. Within a few years though, most had heard of it. We actually even made the crepe version ourselves (my dad also co-owned the restaurant so he learned how to make it and eventually I was the one to make the crepes at home while my parents deep fried the whole thing) and our relatives/friends loved it.
And I kinda think the fried ice cream you can find at many North American fairs was possibly independently created from those found in (ethnic) restaurants. Like some Southern or Midwestern white dude literally just thought: "let's fry anything we can and see what's good!" 🤣

The ice cream is frozen solid. You know how hard ice is to scoop when you first take it out of the freezer? That’s how hard the ice cream must be if you’re going to fry it or bake it.

I'm not a sweets person so I love chicken fried steak which is steak fried like we fry chicken. Fried okra(my weakness), fried zucchini, fried mushrooms, and even fried green tomatoes! I was told, by my grandma, that fried veggies became standard in our house in the deep south due to us disliking most or all vegetables so the idea was "better to eat fried vegetables than no vegetables at all!" Frying vegetables also preserves the veggie in a way to where there is a longer shelf life which is the reason deep frying food was originally invented in ancient Egypt!

The batter on the outside just has to brown and the ice cream doesn't have to cook so it's in & out of the fried very fast and thats how the ice cream stays ice cold in the center.

Fried ice cream has to be done using solid frozen ice cream. It's flash fried, so that's how it works. It actually is sold in a lot of Mexican restaurants.

@@runrafarunthebestintheworld It's in some Mexican restaurants today in California. Not it chains but the nicer restaurants. El Torito in Huntington beach sells them. It's ice cream in flour tortillas with cinnamon with corn flakes I think, deep fried. It's yummy.
