Hi Shinichi and Satoshi! I think your chicken rice looks delicious! I think we all have some sort of dish to remember when times were harder and struggled a bit with finances. I used to make lots of meals with Sapporo Ichiban ramen! I would make the ramen and add whatever I had in my cupboards or fridge...spring onion, veggies, lunch meat, Spam. Just whatever I had available. (Always saved condiments from fast food places like soy sauce, ketchup, mustard, mayo, etc. to add to my struggle meals) It would always hit the spot and take away the hunger! 😊😊😊

I also grab whatever leftovers I have in the fridge to mix in with my instant ramen. I always like to use mushrooms in my ramen but a lot of people don’t seem to like mushroom🍄 in ramen🍜

My Mom is Japanese too. A few of her dishes are a fusion between American and Japanese as well. I am going to make this. I’ve never had ketchup in fried rice. Curious, we grew up having egg rice after school. Did either one of you grow up with this dish as well?

I am curious why alot of adapted recipes in japan use ketchup as a big flavor componant?
As an american I really don't like it espevially as a main flavor

Apparently a lot of people in Japan really like ketchup. I’m not crazy about ketchup either. I don’t hate it, but I also don’t feel the need to use it, even with fries. But if there’s not too much of it, I can enjoy it in a mixed rice dish.

What kind of oil did you use in the frying pan? I find sesame oil adds a nice flavor and juiciness to chicken. Coconut oil 🥥 is good too. I personally never had those two oils affect my skin in a negative way. Animal fat used as oil, yes. But plant based oils are generally good for your skin.

I got Japanese ketchup at a Japanese market here in San Jose. It is sweeter, but similar. But your mom probably used Heinz.
