Traditionally how do you cook it, if you are not using the oven? In pot or firewood like barbecue?
In a pot covered completely so the steam does not escape, the OG ones are made inside a hole on the ground dug specifically for making it. You can also make put the airtight pot on firewood with low heat to slow cook.

Yes you can but just make sure the meat is not sitting on the tray directly because then it can easily burn. If u can wrap the meat in banana leaves then wrap it tightly in foil paper and put the wrapped meat directly on the oven rack.
