If you're on a keto diet, would substituting almond flour in place of the normal flour be recommended? Or should I forget about the flour all together?

We're using one tablespoon of paprika, half a tablespoon of ground black pepper, 1 1/2 tablespoons of seasoned salt, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, and half a tablespoon of dry mustard powder. Now, all we have to do is mix it up. And you can really get creative here and use variations if you like. For example, if you're looking to add a little bit more zing with your wing you can substitute half a tablespoon of black pepper for a full tablespoon, or even better, substitute the pepper with cayenne or Chipotle to really turn up the heat.
Followed your recipe to the letter tonight with 3 lbs of wings for my wife and I. I gotta tell ya, these wings were "to die for"!! They came out super crispy on the outside and moist on the inside!! They were delicious! My wife, who's not a really big fan of wings, but she put a healthy portion away tonight! Only 3 wings remained when we were done...…...saving some for a midnight snack!! I love my baked crispy wing recipe. Just like you I use whole wings with the tips removed. I squeeze them dry with paper towels. I season one tablespoon of baking powder with the spices or seasonings I choose. I coat the wings in that mixture. But what I do differently than in this video is place the wings on a plate skin side up and place into the fridge for a minimum of 2 days to dry out the skin for a a crispier texture. I pre heat my oven to 450 degrees F and place the wings in the oven for 25 minutes on each side so I bake them for a total of 50 minutes.

@@kedra626 No, that is not correct. I did the 30 minutes at 250 and then turned the temp up to 425 as instructed. It was 30 minutes after moving up to 425 that the wings were, in my opinion, done. Another 15 minutes at the higher temp would have made them way overdone. My advice: keep an eye on them and take em out when you feel they are cooked to your liking.
It's so true about the baking powder! But EVERY time I go to the store, I literally ALWAYS forget the baking powder!😭 The sight of your wings have me 🤤
What I have noticed is that a few years ago wings were very cheap in the grocery store. But now that every restaurant is selling wings they aren't as cheap as they used to be.
They used to be cheap because they weren’t seen as a particularly good part of the bird....I wish people still thought so! The prices are getting ridiculous
just made these, if anyone is reading the recipie for his rub is in the discription, easy peasy to make and coat your wings more than whats shown in the video. atleast in my experiance.
I just set the timer for 30 minutes after turning the oven up and check them. Mine usually take 40 minutes at the higher heat, but every oven is different.
This is how I remember baking powder & soda. Powder = P - Puff, soda= s - spread. The powder is an acid and base, like in school or when messing about at home. You mixed vinegar + sodium bicarbonate you get that fizzy wizzy, that's carbon dioxide. Baking powder does the exact same in your dough or in this case rub and that co2 makes things airy/bubbly/raised. Just remember powder-puff so cakes, batters and anything you want light and fluffy. Soda-spread like biscuits, cookies, short bread or anything with a firmer texture. The soda is just a base so there's no fizz.

Dude. Yes. I’ve never thought of not actually trimming them till after baking. I pretty much do this recipe except I dry brine on the baking rack in the fridge for 24hrs in advance because it’s easier and makes them even crispier. I like the low and slow method you do at the first half of the bake. Well thanks, just got home from work, it’s 1230PM and I’m dying for some wings and have to wait until Wednesday. Killing me dude.

@ 1:46 seasoning. 400 degrees for an hour. Flip every 20 minutes (2 times only). Turn off bake and put on broil the last 5-6 minutes of the hour! Crispier!
This recipe is amazing! I made them for the first time about a year ago and have made this a few times since. I'm definitely making these again on Wednesday (1/13/21) for the opening night of the NHL season post covid.

This may be a silly question, but when you increase the heat do you leave the wings in? Didn't know if the 45-50 minutes at 425 should be kept in consideration for the oven to increase to that temperature. If that makes sense
That’s actually a great question.... yes, leave the wings in (don’t remove) and increase the temp. Cook the wings (apx) 45 mins in ADDITION to the 30 min cooking time at lower temp. Hope that helps!

While these turned out well, they stuck like crazy to the baking rack. You didn't mention anything about spraying the rack with cooking spray or anything, so I didn't. But I'm thinking that I should try that when I make them again. What are your thoughts on that?
We will occasionally get one or two that will stick but now all....however a little oil on the rack probably couldn’t hurt, please share your results here, we’d like our community to know!
@@Redmeatlover Having made these wings about ten times now, here's what I do to prevent the sticking. I spray the wire rack with cooking spray. Then 30 min. at 250 in a convection oven. Then crank it to 425 and cook for 15 minutes. Flip the wings every 15 minutes for a total of 60 minutes at 425. That's 1.5 hours total in the oven
I brown each side 2 minutes per side, in a non-stick pan, no real need for any powder or anything. Season the hell out of them, with whatever you like, Brown them in the pan. Put foil in a pan, then the rack, then the wings on the rack, COVER, bake for 45 at 325. Done! Add your favorite sauce. Done! Everybody has their own methid there's no right or wrong way! Yes you can just remove the flour for keto... follow the rest of the recipe / method and you’ll still end up with crispy wings!

4 lbs wings (w/o tips)
Preheat oven 250 degrees Fahrenheit
1/2 tbs flour
3 tbs dry rub
1 1/2 tbs baking powder (not baking soda), makes chicken skin crispy.
Evenly space on baking racks so air can circulate underneath.
Bake 30 min.
Increase heat to 425 degrees Fahrenheit
Bake 400 - 425 degrees Fahrenheit

This may be a silly question, but when you increase the heat do you leave the wings in? Didn't know if the 45-50 minutes at 425 should be kept in consideration for the oven to increase to that temperature. If that makes sense
That’s actually a great question.... yes, leave the wings in (don’t remove) and increase the temp. Cook the wings (apx) 45 mins in ADDITION to the 30 min cooking time at lower temp. Hope that helps!

While these turned out well, they stuck like crazy to the baking rack. You didn't mention anything about spraying the rack with cooking spray or anything, so I didn't. But I'm thinking that I should try that when I make them again. What are your thoughts on that?
We will occasionally get one or two that will stick but now all....however a little oil on the rack probably couldn’t hurt, please share your results here, we’d like our community to know!
@@Redmeatlover Having made these wings about ten times now, here's what I do to prevent the sticking. I spray the wire rack with cooking spray. Then 30 min. at 250 in a convection oven. Then crank it to 425 and cook for 15 minutes. Flip the wings every 15 minutes for a total of 60 minutes at 425. That's 1.5 hours total in the oven

I brown each side 2 minutes per side, in a non-stick pan, no real need for any powder or anything. Season the hell out of them, with whatever you like, Brown them in the pan. Put foil in a pan, then the rack, then the wings on the rack, COVER, bake for 45 at 325. Done! Add your favorite sauce. Done!
