We rarely use haldi/turmeric in alu paratha,we also add Anardana/sour pomegranate seeds to masala mixture..we preferably eat with lot of butter on its top,curd,pickles and chutney,then lot of buttermilk/lassi with this.Your's is also good attempt with millets.Thanks for posting,going to help hundreds of thousands in future.
Turmeric is rich in curcumin which is antiseptic and removes free radicals which are carcinogenic So it is very important to add turmeric in all recipes Yes for sourness either amchur or anardana can be added

Also another important sweet savories like "Kajjaya" (is Arka used for this), Karjikai, Kadabu (which millet can be used)?.... parvathy ulaganathan there are many shops in bangalore but i cant vouch for anyone It’s for you to identify which sell unpolished millets and which don’t Even in the same shop the stock may be different each time based on where they source it from So its best if you are aware about how to identify unpolished millets and check every time About oils many are selling as cold pressed or ganada yenne or even wood pressed but are not mentioning if it is machine or bull driven You need to ask them this specific question before buying

Mam this floor is simply grinding the millet and then making the dough with flour and rest for 6 hours . Or first soak the millet for 6 hours then dry it then make flour and then make dough and again rest for 6 hours?
We usually make the flour after soaking the millet and then sun drying it so that it can be used urgently for few recipes like tomato dosa, millet balls etc But for making chapathi or paratha or poori I would advice that the dough is rested even if the flour is made from ore soaked millets as it makes the dough smooth and easy to work with You can skip the step of pre soaking millet before making flour if you are going to use it only for chapathi/ roti or paratha since the resting time of the dough will also act as the soaking time for millet
If you wash dry and then make the flour you can use it half an hour after mixing the dough If you haven’t pre soaked then you can rest the dough for 4 to 6 hours and then make roti or paratha Whichever is convenient you can follow

But I have found that roti is softer if you let it rest longer
