Vader states in the movies to Tarkin, "the last time I felt it was in the presence of my old master" BOOM Tarkin knows. If he didnt know before, he could figure it out now since they all worked together in the Clone Wars, but considering Tarkin seemed pretty calm during the conversation he probably already knew since there was no sudden epiphany/realization
Also, Tarkin states that he is the last of the Jedi's religion, therefore he knows that he was once a jedi

Some Jedi leftover from the clone war with defunked religion. The admiral who fought with him has more respect. What they all appear not to know is that the emperor himself is a Sith.

Kryptonic we out here huddling up on a 3 year old video. I read (on Wikipedia) that everything after 2012 when Disney acquired Lucasfilm, is considered Canon. Everything before, is Legends. So all books and comics from like the 80s, 90s, 00s falls in Legends and “isn’t canon.” Sounds like shit
Canon is anything following the story lines of the films. All three trilogies, Star Wars the clone wars cartoons, and I think Star Wars Rebels is canon too, not too sure. Also Han Solo and Rogue One. Everything else isn’t official until it’s acknowledged in the films.

I always contend that Tarken knew, but did not let on to others. His lines in Star Wars are what makes me believe that. "The Jedi are extinct. Their fire has gone out of the universe. You my friend are all that's left of their religion." I believe Dash Star or another addressed the same question in a video, and I said the same there.
