Cake Mars - juicy, tasty, delicious, aromatic and mega chocolatey

  • To make Mars cake you will need only:
    • Cream (from 30%) - 290 g
    • Chocolate - 235 g
    • Sugar - 225 gr
    • Butter - 140 g
    • Cream cheese - 140-150 g
    • Milk - 85 g
    • Flour - 80 g
    • Cocoa - 20 g
    • Eggs - 1 pc.
    • Gelatin - 3 g
    • Baking powder - 1 tsp.
    • Salt - 0.5 tsp.
    The quantity of ingredients for the preparations will be as follows:
    Biscuit:
    • Eggs - 2 pcs.
    • Butter - 100 g
    • Sugar - 75 g
    • Flour - 80 g
    • Cocoa - 20 g
    • Milk - 50 ml
    • Chocolate - 80 gr
    • Baking powder - 1 tsp.
    Salted caramel:
    • Sugar - 150 g
    • Cream (from 30%) - 150 g
    • Butter - 40 g
    • Salt - 0.5 tsp.
    Cream layer:
    • Cream cheese - 140-150 g
    • Cream (from 30%) - 30 g
    • Chocolate - 50 g
    • Salted caramel - 30 g
    Chocolate-caramel layer:
    • Cream (from 30%) - 70 g
    • Chocolate - 55 g
    • Milk - 35 g
    • Gelatin - 3 g
    • Salted caramel - 30 g
    Chocolate glaze:
    • Cream (from 30%) - 30-40 g
    • Chocolate - 50 g
    Stages of preparing Mars cake:
    Biscuit:
    1. All ingredients should be the same, at room temperature.
    2. Melt the chocolate and leave to cool to room temperature
    3. Mix flour, cocoa and baking powder
    4. Combine softened butter with sugar and beat with a mixer until white and increased in volume.
    5. Add eggs to the whipped butter one at a time (add an egg - mix, etc.)
    6. Then add half the milk - mix
    7. Add half of the dry ingredients - mix
    8. Add the second half of the milk - stir
    9. Add the rest of the dry ingredients - mix
    10. Add melted chocolate - stir
    11. Pour the dough into a mold lined with parchment paper (mold diameter - 16 cm)
    12. Bake in an oven preheated to 160-170 degrees for 50-60 minutes
    13. Remove the finished biscuit from the mold and leave until completely cooled.
    Salted caramel:
    1. Pour sugar into the pan
    2. Melt the sugar over low heat until it becomes an amber-colored caramel (do not stir!)
    3. Add butter to melted sugar and mix
    4. Then add cream - stir
    5. Then add salt - mix and cook for 2-3 minutes
    6. Cool the finished caramel and, if possible, keep it in the refrigerator for several hours
    Chocolate-caramel layer:
    1. Combine gelatin and milk - mix and leave for 10-15 minutes to allow the gelatin to swell
    2. Bring the cream to a boil
    3. Add swollen gelatin to hot cream - stir
    4. Then add chocolate - stir
    5. Then add salted caramel - stir
    6. Leave the resulting mass on the table until it cools completely and thickens slightly.
    Cream layer:
    1. Melt the chocolate and leave it on the table until it cools.
    2. Combine cream cheese, cream and salted caramel - beat into a homogeneous mass.
    3. Add melted chocolate - stir
    Assemble the Mars cake:
    1. Divide the sponge cake into three layers.
    2. Place the first cake on a plate - place a molding ring around it
    3. Place a chocolate-caramel layer on the first cake layer and smooth it out
    4. Place the dish with the crust in the refrigerator for 40-60 minutes (so that the layer “sets”)
    5. Place half of the salted caramel on the layer and smooth it out
    6. Place the second cake layer on top of the caramel.
    7. Place a layer of cream on the second cake layer (2-3 tablespoons of cream can be left for decoration)
    8. Place the second half of the salted caramel on the cream layer and smooth it out
    9. Place the third cake layer - brush with the cream left for decoration
    10. Cover the cake with film and put it in the refrigerator for 5-6 hours
    To decorate the cake, we used chocolate ganache (combine melted chocolate and cream), chocolate sponge cake crumbs and a Mars chocolate bar.
