Just cooked this my and OH MY GOD it’s DELICIOUS!!! Thank you SO MUCH, Shamza, for sharing this recipe - it now replaces the recipe I had for Bhindi! 👍
Must say it looks good mA. All that brown fond at the bottom of the pan, would it affect the dish if you added a couple tablespoons of water to lift that off the bottom and incorporated into the dish? Im sure the water would evaporate right off

Going to try okra this way. Some coat tge cut okra a bit long, with besan(gram flour( and shallow fry till 80% cooked before adding to the masala gravy. Okra is washed salted & Kashmiri chili powder added for flavor.

Made this yesterday! First time I’ve made it. It was delicious, will defo make again! For those saying about the sliminess, the recipe and method considers that hence the cooking it off. And it’s a 30min dish hence why frying it off first is eliminated as the cooking process gets rid of it.
Still looks slimy...... we’re you to add okra first in oil before cumin, stir fry on high heat till okra turns bright green and slime gone. Then you with your method. Also much reduced cooking time

Great recipe and excellent presentation. I cut and freeze Okra from my garden. Is there any special step that I need to take for the frozen Okra other than thawing them? Thanks.

I find it’s easier to get rid of the stickiness if you fry the okra at step 1. They keep their shape, too. Put them aside and then continue with step 2 for onions and tomatoes. Perfect with cold lassi and roti.
In all honesty I feel okra doesn't need ginger and garlic as that's how I've seen my grandmother and mother it. And it tastes really nice especially with mint & coriander chutney. You'll be amazed 😊

Hi there, yes you can fry the okra but I normally don't. Either way the slime disappears 😊👍
Yes, bhindi always fried separately first.
Tasty but not healthy to fry beforehand and also you lose the nutrition when frying.🤷♀️
