I think that frying your tortillas at home works better because you can stop the frying while they are still slightly flexible rather than explosively crisp. That makes these, and tacos, much more convenient to eat.

The smoke point for olive oil is 400° (some guides say 450°), so it is fine for any frying I'm going to do. I use avocado oil mostly when I am preparing food to feed to others, since not everyone likes the taste of EVOO. For this reason when I can only afford to buy one oil, I opt for avocado oil.

I love tostadas, but everytime I eat them I have an internal debate about whether to pick it up and bite it or to break a piece off and use it to scoop some of the toppings 🤣 One of the reasons I love chilaquiles and migas, I don't have the same problem 😂😂
That is a tiny can of chipote peppers. I didn't realize they came so small. It makes sense, though. I can't think of a time I used a whole 7oz can. I'm making half a recipe today. I know it will be delicious like everything else I have cooked using your recipes. Thank you for sharing !

WARNING!!! lately the chickens i purchased...no cheap price, whole chicken, got me scared... Found a liver that was showing signs of illness...then i was preping a whole chicken and I removed the skin and voila...in one side of the chicken it was like a "spaquetti squash" large area and as i was touching that part the meat was like having a hole full of worms (no real worms) the whole thing was going deep into the skin... so do NOT cook the whole chicken without removing the skin and check the whole chicken...two chicken in one purchase is too much. Another person found cancer meat..you will find it in the inside of the chicken and is not yellow fat...is yellowish in color but it is stuck into the meat...u will know the difference for sure. So be aware of that..do not feed your family sick contaminated meat. Bare in mind that in all the years processing, cooking chickens never ever ever find the "spaquetti worm like" issue...this is new...and I have the experience of many many years...

There's nothing Tex Mex about this recipe. A crock pot is used but it's for convenience
