we usually eat these as tostadas with the shells that come in the yellow bag you can buy at any mexican grocery store or you can make at home if just feeding yourself. the crunch adds a nice texture to every bite that i think makes the tinga taste way better than in soft tortillas. like the channel and your humor. keep it up
My GF roasted a turkey this weekend. I did this recipe as a quickie Monday night meal for the family and even if you don't cook the meat in the sauce, it's a perfect way to reheat poultry leftovers for an impromptu taco night!!!
Something I love doing with my chicken tinga tacos is lightly toasting corn tortillas (idk I just like them better), then getting a preferably non-stick pan really hot and throwing in a good bit of pepper jack cheese to melt into tortilla-sized discs. Let the cheese get nice and melty, then when it starts browning you throw a toasty tortilla onto the cheese disc. That way it sticks to the tortilla and you get a cheesey crunch
I absolutely love making chicken tinga! As others have mentioned it's an easy one to do in the instant pot if you have one. If it ever ends up far too saucy leaving you with soggy tacos it's an easy thing to turn into a rice bowl instead for equal amounts of yum.
When I throw vegetables and fruit against the wall they also magically turn into perfectly cut slices. Never knew I could do this until watching your videos. Thanks for the pro tip. 😃

You're going to like this surprise and it can be applied in a lot of dishes and you can turn them on your stove. Learned it in a Mexican restaurant and figured I could do it at home, with the garden. Have fun with it.

I'm Mexican and had my Mexican coworkers straight from Mexico make this all the time. Imma have to verify but it looks good. Chipotle peppers are amazing.
I am the main cook for my family and Chicken Tingas is one of the favorite things. I generally recommend people use dark meat chicken instead of white meat, but I think it comes down to personal preference. I also like to top mine with pickled carrots and onions along with a roasted corn salsa. I also tend to make everything except the chipotles in adobo from scratch, so that might also be a factor

On 00:17 I have noticed that your throw-chopping technique didn't yield the maximum amount of chopped onion strips from that bulb, and for that I would like to recommend the blind-folded, fast throwing technique, as it has yielded the most amount of chopped onions for me compared to the other techniques I have tried. The doubled tortilla is so when the first one crumbles the second catches it, making another taco. If we keep adding tortillas, we get infinite tacos.
