Here is a recipe for Chicken Tinga from Mely Martínez

I've used different recipes over the years but here's the way I went about it recently:
RECIPE
Chop up one large or two smallish mediumish yellow onions
Chop up a few cloves of garlic or more if you're feeling dangerous
Chop up two chipotle peppers or more if you're feeling dangerous
Sauté those things in a saucepan on medium until you get bored
Add broth, a can of diced tomatoes (or just go with crushed if you don't want to do any blending) or go with fresh tomatoes. You could use most tomatoes. Except evil ones
Add in a teaspoon of salt...but probably two
Add in some cumin if you feel like it (a couple teaspoons ish)
Add in some oregano, or Mexican oregano, or as they call it in Mexico,: orégano
Get that cauldron bubbling until you can feel the spirits fill the room
Add in 3 chicken breasts and simmer for 25 minutes
Take the pot off the heat and take the chicken breasts out and shred
Once the sauce has cooled enough use a stick blender to make it smooth
Add the shreds back in
Adjust the salt and cook it until it's a consistency you like
Make sure to fry your tortillas
Add some chicken, lime crema, avocado, cilantro, and cotija cheese
Accept your award for Excellent in Pot Size Estimation
Try not to brag too much to your friends because some people really struggle with estimating liquid volume and it's not fair that you were born with such a tremendous gift. - Хобби

if you liek that watch atomic shrimp's "weird stuff in a can" videos. He even explains why he does it sometimes. pull rings leave a rim where stuff stucks all the time so he just uses a can opener instead.
Could be that he just cut his nails or something too, those pull tabs are murder on freshly cut nails.

As a Mexican my sacred duty is to comment "that's not the way we actually do it in Mexico!" on every video of an American making Mexican food but for tinga everyone has their personal recipe so this is spot on. You just won the anual tinga award 2024.

The doubled tortilla is so when the first one crumbles the second catches it, making another taco. If we keep adding tortillas, we get infinite tacos.

Let it be known that I saw the thumbnail depicting Tina’s tacos and clicked it looking forward to those tacos and was mildly disappointed when I saw the real ones.
Something I love doing with my chicken tinga tacos is lightly toasting corn tortillas (idk I just like them better), then getting a preferably non-stick pan really hot and throwing in a good bit of pepper jack cheese to melt into tortilla-sized discs. Let the cheese get nice and melty, then when it starts browning you throw a toasty tortilla onto the cheese disc. That way it sticks to the tortilla and you get a cheesey crunch

Fun fact: this was one of the first things I ever cooked, and I'm pleased to say that after many years, I still suck terribly.
As a Mexican, I am proud that chipotle peppers are having their YSAC moment. Alsooooo.....there are chipotle peppers that come already diced that way you don't have to succumb to such manual labor 😉

My GF roasted a turkey this weekend. I did this recipe as a quickie Monday night meal for the family and even if you don't cook the meat in the sauce, it's a perfect way to reheat poultry leftovers for an impromptu taco night!!!

For a crunchy texture, garnish your tacos with thinly sliced radishes or pickled red onions. They add a refreshing crunch that contrasts with the tender chicken

we usually eat these as tostadas with the shells that come in the yellow bag you can buy at any mexican grocery store or you can make at home if just feeding yourself. the crunch adds a nice texture to every bite that i think makes the tinga taste way better than in soft tortillas. like the channel and your humor. keep it up

I absolutely love making chicken tinga! As others have mentioned it's an easy one to do in the instant pot if you have one. If it ever ends up far too saucy leaving you with soggy tacos it's an easy thing to turn into a rice bowl instead for equal amounts of yum.

I thought I had it in the bag after I boiled the exact amount of water needed for my cup of tea but I can’t best chickeny saucy goodness.

those methods are about three things: consistency, safety, and speed. if you get the first two with whatever way you chop, you dont have to worry about the last one bc none of us need restaurant speeds at home.

Sour cream lime juice cumin salt garlic powder chipotle pepper (muddled ) mix mix. Yummy yummy. Dip your quesadilla or put it on your tacos.
