I also make mousse cakes with velvet spray and I highly recomend that you use a cardboard box in the back that's big enough for your rotating table to fit inside while using your spray gun to prevent the cocoa butter mixture getting all over your walls and kitchen. It's easier to just throw away the dirty cardboard than cleaning the greasy kitchen. Have a lovely day.
