- I’m sure I am not the only one, but there have been too many times where I am watching Korean Drama in the middle of the night, and my mouth is drooling, my stomach and growling, and all I want to do is jump inside the show and take a big bite of the food.
Welcome to a new series where I cook recipes from my favorite Korean Dramas, and the first recipe comes from my all-time favorite drama, Itaewon Class, and their delicious, savory Korean Spicy Soft Tofu Stew - Sundubu Jjigae. Spicy and addicting Korean Spicy Soft Tofu Stew is not only tasty but also super easy to make at home. As a Korean, Soondubu is my absolute favorite Korean dish and is tied for my overall favorite.
I'm glad that this dish is loved by so many non-Koreans too! It's truly a comforting, warm dish that carries so much nostalgia for me.
I tried this and I loved it so much simple ingredients but has so much flavor and tasty 😋 I love going to Korean markets

Mmmmmm one of my favorites. I will say while soft tofu works if you can’t get the real stuff, nothing beats soon tofu she uses here that’s made for soups like this

Dashi nor anchovy stock is not vegetarian, so how do you make it so? Vegetable stock with mushroom seasonings? I’ve heard of adding fishy flavor with seaweed?

I get so confused making korean food because there are so many different ingredients in one dish, so I just stick with japanese cooking which is rooted in basic flavors of miso, tamari, mirin and ume. It keeps my pantry clutter-free.

dashi/anchovy stock are not vegetarian, btw. Use vegetable/shiitake mushroom stock instead if you'd like it to be vegetarian.

What is dashi?
Water boiled mainly with anchovies, dried shrimp, green onions, and radishes. If not, you can replace it with chicken stock and MSG.

However my soup wasn't red as yours maybe because I did not use Korean red peppers
I’ve tried multiple recipes for this type of stew and it’s flavourless. I’m starting to see that Korean food is super bland.
I’ve only had Soondubu jjigae at restaurants and it’s really good. Recipes are not it. And seeing as you’re vegan, the soup isn’t supposed to be veganized otherwise you won’t get the same flavor profile
