I grew up on Taylor Ham in NJ. When I moved to Florida all my friends were breaking my chops on not being able to get it. After getting a job in an Italian market the first thing I did was source Taylor Ham. It is now a menu staple is our shop " The Jersey " Taylor Ham, Egg & Cheese on a roll.Even though it's not a true kaiser roll it works well and every time I see someone order it brings a smile to my face. Great video
how does it compare to spam? i found some at my local store all the way in las vegas i wanted to buy it but it was about 11$ not too bad for how much you get vs a can of spam but i dont want to not like it and waste it.

@@BirdBathGG if you like spam you'll like pork roll, they have similar saltiness but pork roll has a slight tang that spam doesn't have. Pork roll also has a softer finer texture compared to spams firmer springy chew. I love both, especially over a wood fire.

Makes sense - aging meat takes a specific combination of humidity and temperature. None of the BA fridges have been modified for that, but these guys do make their own.
Basically Brad went to where they are set up for it.

Born in Towaco, NJ 72 years ago and there is nothing in the world as good as Taylor Ham. Over the years I have had it shipped to all over this great country of ours just to quell my cravings. There has been a number of imitators...tried them all ...... NONE have even come close. You cannot duplicate perfection.
Searched Brad Leone because it's been a while without a new It's Alive video... and I'm gifted with this treat.

I live in Sacramento and I randomly saw Taylor ham at this specialty Italian store. I bought some everything bagels and I'm super excited to make that sandwich this weekend

I, Like Brad, grew up in northern New Jersey. The go to sandwich on the way to work in the morning, was Taylor ham, fried egg and cheese on a hard roll. God, I love it.

I am a cheese specialist, but I also manage the slicing case for the deli where I work and I've always been so curious as to what is up with the Taylor Pork Roll?! It's like a THING for people here in Roanoke, VA. I would have guessed it's roots to be more Southern than it is! This was incredibly helpful in understanding and I have a totally new appreciation for it and will most likely have to make one of those sandwiches tomorrow now. I can see mustard and a bagel balancing it's saltiness quite well. And I didn't know it was fermented! I love that!
Brad is the legend we all strive to be like. Along with his legendary camera man I had to research for 20 mins to find his Instagram... damn worth it!

I’m from Jersey and moved to Denver CO three years ago. Was missing pork roll and found some at a grocery store here! Could not believe my eyes! I asked the deli clerk and she said that a guy from jersey lives here and he puts in a special request for the Taylor ham and they get it for him and sell the rest that he’s doesn’t buy. Amazing.

I grew up in central Jersey, so it's Taylor Pork Roll to me. I love it. Oh, and more people die of heart failure from salt deficiency than too much salt. Also, the recipe should include bacon, too, not just pork shoulder.
