I use fat slices of garlic on low heat to drag the garlic oils into the cooking oil; after a while remove the cooked garlic, add rice; then add minced garlic... this way you get some roasted garlic flavor without the toasted garlic bits
Having this with longanisa, bistek or tocino is amazing. As longnaisia n tocino is not as easy to get hold of in London, as a cheat and my mun did this who is Filipino, she served it with fried egg and frankfurters which is what I do now

I made this yesterday!! It was INCREDIBLE. Aside from using up 2/3 of my garlic bulbs, it was so worth it! I used 2 garlic bulbs, 2 shallots, and 1 sweet onion... also had an old can of sweet corn that I drained and tossed in. This recipe is so versatile!
Arranging this recipe is would be one of the best creation in the quarantine days. It’s like a “plain canvas recipe”. We can make it more colourful by adding our favourite ingredients.
We Filipinos love our garlic fried rice too. But my version is a bit different. I use Soy Sauce, Oyster Sauce, or Liquid Seasoning instead of the ordinary salt to add a bit of other flavor instead of just garlic. And sometimes I add a few cooked minced or grounded left over meats if I wanted to make it a meal instead of just rice. Add sunny side up egg and you're golden.

Since you said went creative with it , I added some Chicken Knor seasoning and black pepper too. I added an Egg in the rice like if I was making stir fried rice. Instead of using oil I used butter and OMG it was so goooooddd. Thank you for sharing!
In the Philippines we call this Sinangag, usually made with cold/old rice. Same ingredients and we have it for breakfast too usually with some fried fish/sweet pork/marinated beef ☺️

Oh I LOVE toasted garlic! The flavor is so different than uncooked or partially cooked. My favorite rice is Jasmine rice with Basmati rice second. Wouldn't this taste good with thick bacon lardoons?
I would add egg and Chinese sausage. I just bought the sausage for the first time a few weeks ago and now I’m obsessed! And I’d add scallions, of course. Obsessed with those too.

That is a classic Filipino breakfast we usually pair it with a dried fish and sunny side up egg. I remember my mom would put atleast 2 tbsp of her black coffee to her rice thats a bit weird but trust me, its good. (Coffee is just the instant one. Its bad with brewed)
