Thanks for sharing! Can I use minced garlic instead of cloves?

I love this simple recipe. Keep refrigerated right. Not shelf stable. I just ordered 24-5oz bottle kit.
I want to learn to ferment. Do you have a simple recipe for that???

I always keep my hot sauces in the fridge to prolong their shelf life (typically around a month). For a fermented hot sauce I would use a 2-3% salt solution and ferment for 5-7 days and then follow this recipes after the peppers are done fermenting (minus roasting the peppers) I do have a recipe on my channel for a fermented version as well.

The one pepper company that sells ghost pepper seeds and sauces the guy claimed the sauces he sells are shelf stable. He said if you make it with the right ph level then you don’t have to refrigerate it. I’ve never heard of this but if it’s true it’d free up an entire shelf on my fridges door if true.
