Ingredients:
Caramel:
100 gr. white sugar
100 gr. of hot cream 33%
30 gr. butter 82,5%
pinch of salt
Custard (basic):
200 ml. 3.2% milk
50g. white sugar
20gr. corn starch
150 ml. 33% cold cream
vanillin to taste
pinch of salt
Chocolate ganache:
80g. dark chocolate
120g. 33% hot cream
Butter cream:
100g. basic cream
100g. cottage cheese
40g of dark chocolate ganache
+ cocoa for flavoring (optional)
Optional:
80g salted peanuts (crushed)
