As a monngolian this is pretty close to acurate( historically). Nowadays we mostly use steel caskets and put all the onions, carrots , potatoes etc then meat. Then specifically picked smooth rocks are heated on fire then put into the casket one by one rock in, close lid, shake and tumble repeat. The heat and steam cooks the meat. So it's fried and steamed at the same time.

I was very confused at how well seared the meat was in a steamed environment until I realized that the rocks were obtaining heat from the steam to sear the meat in contact with the rock surface. That's actually a 10,000 IQ cooking strat, I cannot believe I've never seen this method used before, I'm baffled at how cool this is.

Ughhhh our school system has failed us again. The rocks would never get hot enough in boiling water to sear the meat. Water under normal atmospheric pressure is only 212 degrees at sea level. The meat in that pot would never get seared unless it was at the bottom next to the direct heat and the water boiled away.
This stone cooking method is really fascinating, from historical and culinary view. It was used in many cultures throughout history, often associated with military customs. In ancient field kitchens, they'd use stones to better keep a consistent heat over a high frequency of meals. For example the Iranian "Sangak" or *pebble bread".
I expected thin fillets of beef over the rocks giving slight variations of crisp and tender. Oh I spoke too soon he is cutting it like I thought, finger thick.

I see it's the cooking method that really does it. The hot oiled rocks continue to fry the meat and onions, even as the hot steam boils them. That's gonna be hard to replicate in a kithen.
This is not frying. This is a (basically) pressure cooking. You can just buy an croc pot or instant pot and do the same thing without needing a fresh river and firewood. But yeah the next time I go camping with a dutch-oven I'm totally gonna impress my friends with Mongolian food.

I was very confused at how well seared the meat was in a steamed environment until I realized that the rocks were obtaining heat from the steam to sear the meat in contact with the rock surface. That's actually a 10,000 IQ cooking strat, I cannot believe I've never seen this method used before, I'm baffled at how cool this is.

Ughhhh our school system has failed us again. The rocks would never get hot enough in boiling water to sear the meat. Water under normal atmospheric pressure is only 212 degrees at sea level. The meat in that pot would never get seared unless it was at the bottom next to the direct heat and the water boiled away.

In ancient field kitchens, they'd use stones to better keep a consistent heat over a high frequency of meals. For example the Iranian "Sangak" or *pebble bread".

I see it's the cooking method that really does it. The hot oiled rocks continue to fry the meat and onions, even as the hot steam boils them. That's gonna be hard to replicate in a kithen.
This is not frying. This is a (basically) pressure cooking. You can just buy an croc pot or instant pot and do the same thing without needing a fresh river and firewood.
But yeah the next time I go camping with a dutch-oven I'm totally gonna impress my friends with Mongolian food.
