Easy Delicious APPETIZER With BURRATA Cheese & BASIL PESTO!

It has a milky, buttery flavor that's rich without being too indulgent.
This pillowy, springy cheese is fresh, mild, creamy, rich without being too indulgent tastes like butter. In this recipe it is served with basil pesto which is bright and herby from the basil, salty and rich from the parmesan cheese and toasted pine nuts. It is garlicky, with pleasant milder, aromatic, buttery, and floral good quality olive oil. Add to this delicious combination blistered flavorful, sweet, juicy cocktail (cherry or plum) tomatoes as some call them and toasted French loaf toast that crusty around the edges with a gooey center, almost like custard.
The combination of textures and layered flavours in these food items bring an adventure in your mouth. Soft or pillowy, juicy, chewy, crusty, sweet, aromatic, salty, herby and so on. I hope you enjoy this plate of adventure 😁
INGREDIENTS
200g or 1 fresh burrata cheese or Paesanella
1/4 cup basil pesto , preferably homemade, recommended
250g- 500g cherry tomatoes
2 tbsp extra virgin olive oil
2 tbsp chopped shallot or red onion
1/2 tsp cooking/kosher salt
1/4 tsp black pepper
2 tsp sherry vinegar (or apple cider or red wine vinegar)
SERVING:
1/2 tsp salt flakes (or half the quantity for cooking/kosher salt)
1 tbsp extra virgin olive oil , a good one is best, for finishing
Few fresh basil leaves , for sprinkling
Warmed crusty BREAD, for mopping the deliciousness
