As per Ayurveda, a combination of milk with onion is considered as Viruddh Aahar (not edible food) which produces toxins and can cause skin diseases!
Can we skip the milk?
I have been making chaddannam instead of overnight soaked oats and it’s so much more better . My gut can feel the difference . I have also tried adding cucumber and carrots to it .

Counter. At warm space. Just like a baking dough containing yeast. However curd needs more time for the chemical reaction as compared to yeast.

Yes, modern fermented rice with curd, green chilies, onion pieces will be so great and delicious when you eat in the morning instead of Dosa, Idlies, chutney and sambar.
But, look back the days when poor people ferment the left over rice and eat with just plain water and salt as breakfast. In those days parents couldn’t afford making idli or dosa, and the children were crying for those delicious idly or dosa.
So do not just praise the modern fermented rice but praise those who lived their lives with simple “Chaddi Annam”. 🤷🏻♂️
Could we instead put curd directly in place of milk ?
And adding pickle in end spoils its taste, nutrition and everything.
It could be even made without onion.
But why does it get so sour in morning what to do to prevent souring
Can we skip onions?

Y hot water? Luke warm milk z enough.
Fermented rice is really good. But with as little salt as possible and without pickle. Salt & pickle both will increase BP and not be good for the kidney.
This is a superbly simple, healthy, delicious recipe. But why pour water over the rice, why not just add milk? Adding water made the dish watery rather than mushy.
It is hot water to kill any unwanted fungus or spores. Also it is supposed to be watery- to allow for the fermentation and quenching thirst while nourishing your gut.

Healthy recipe but you must use spoon for preparing food..
For some procedures, like kneading dough, we do use bare hands (of course after cleaning them thoroughly)
