This sandwich with tri tip, sourdough, Jack cheese is pretty traditional NorCal. It’s cool that the way you tweaked it with the aoli, arugula and the fennel instead of onions are all the kind of tweaks you might see at an SF restaurant but combined in a way that looks amazing
Before you posted this I thought to myself the Norcal recipe better include artichokes, sourdough, and wine. Did not disappoint! This looks awesome!

I live near and work in Santa Maria. Really glad you picked tri tip to represent the area. It’s definitely a staple for families all around this area. The right way to cook it is definitely over wood and we normally use a Santa Maria style grill. It’s just an open fire pit with a crank to raise the grate up and down. So simple but man is it a great way to spend an evening with the family or the guys. Keep it up Adam! Tri tip is the best and sandwiches are great! French roll with meat and some fresh salsa is the way to go!

I'm so happy to see tri-tip featured! When I went back to TN to visit I wanted to fix one for my relatives and couldn't find one anywhere, even a butcher had no idea what I was talking about!
Sonoma county kid. Growing up Summmer meal is tri tip, arugula salad, fresh bread, and caprese salad (plenty of fresh tomatos) oh and wine. I’d say you nailed it.

If you’re going to Colorado you absolutely need to look at pork green chili! I live in Denver and can say that no matter where in the state you go to get food you will almost 100% find a green chili dish!

@@AdamWitt I made this yesterday (on my electric BBQ with cedar wood chips) but ate it today. I cut the tri-tip ultra-thin & t came out like lamb; I made gyros. Yummy. I'll make the aioli later today & eat the rest of it like a regular sandwich on sourdough. Thanks, Adam.
