As a guy who lives in central missouri KC BBQ is amazing. But now I’m intrigued on what our dish will be. I’d say toasted ravioli, which is amazing, but my St. Louis buddies introduced me to it and seems to be a St. Louis thing and not the whole state.

It's a problem we always deal with here. You go to a concert and the singer always goes "What's up Kansas?!?" When you're on the MO side. This goes back to the reason they named the state Kansas in the first place. KCMO already existed, Kansas took the name of the city for their state and also named their city that, to confuse people as to where they actually were and bring money to their side. Still working til this day as you can see

Burnt ends were invented in KCMO. They were popular in Missouri for about 70 years before Kansas discovered them and then replicated them. I'm a lifelong KC area resident. BBQ history in Kansas City: Missouri has been at BBQ for about 100 years. Kansas started imitating Missouri about 30 years ago.

Food historians give Bryant's the credit because they have one of the oldest menus (almost 100 years old) that clearly shows burnt ends as an offering.
I've seen the shows and watched the documentaries. Burnt ends may have started at A.B.s, but regionally speaking KC style BBQ is the same across the city. KCK and KCMO alike... plus I want to feature either ribs or St. Louis pizza for Missouri's episode.
Yeah love this channel but he's doin Missouri kinda dirty on this one. And KS as well because there's probably something else from there he could focus on. And if you do St Louis for whatever reason you should definitely do the St Paul sandwich. St Louis Pizza is alright but that sandwich is the best thing to come out of that city imo. I don't see St Louis as representing MO as well as KCMO though

Imo's Pizza from St. Louis tried to open satellite restaurants in Kansas City 30+ years ago. They lasted about a year before they went under. If St. Louis pizza was actually so fabulous, then Pizza Hut, Domino's, and all of the national chains would have ripped it off years ago and sold it to the masses. There's a good reason why they don't do SL pizza: It's shit. It won't sell.
Agreed. My wife loves it so indulge from time to time. But even the places here that are supposed to make it well, like Leo's up north, still come out pretty lackluster most of the time. I've had maybe one I enjoyed. Also St Louis all around just doesn't feel like the rest of Missouri to me. Feels like a different state
Don’t get me wrong, I love KC BBQ, and I love burnt ends but man… Texas BBQ just makes more sense. Why take all the time to smoke the brisket that long and let it rest over 2 days, when you’re just gonna cover it in bbq sauce and can’t even taste all that hard work of yours smoking it that long?

The city is split in half, sort of. KCK (Kansas City Kansas) and KCMO (Kansas City Missouri).
