I’ve got to say these were hands down the best burgers I’ve ever made, thick and juicy and I had everyone asking how I made them. Didn’t have a flat iron press all I used was a small pot about the size of a burger to smash them and they were so good. Had to come back and thank this RUclipsr. Great job!!

Looks awesome! I've been making them like this for some time, I've learned that using drawn butter helps prevent the butter from burning and ya get less smoke in the house. Just melt the butter in the microwave and let it sit for a few minutes. Then, scoop out and discard the milk solids and you're left with the clear butter that has a higher smoke point.

Do what shake shack does and use a spatula. They use 2 actually, 1 to smash the burger and 1 to smash it down with by using the handle to push down on other spatula.

i watched a video with the owner of smashburger. I think he said they used salt and pepper, and garlic salt. also he puts parchment paper on top of the burger before he presses it down
Some tips: you can do this with a stiff metal spatula, smash more on outer edges for more crisp, salt the ball of meat before smashing, use peanut oil instead of butter for more crisp
Grill the inside of the buns with some butter until they are golden brown! Not only do they taste better, it keeps them from getting soggy from condiments.

Got a nice sear, I'm sure it was a great burger, but two things I wouldn't do. First off, and I've yet to actually test this, but the loosely packing thing is supposed to be more for a thicker formed patty. The reason this one looks kind of like a donut and breaking apart, from what I've read, is because it needs to be tightly packed. Second off, and something I do know for a fact, the butter. It has a smoke point of 300-ish degrees Fahrenheit and that cast iron is probably easily reaching 400 getting a sear like that that fast. Basically, you burned the butter before the burger was even on there. If you really want oil, find something with a smoke point over 400, peanut oil and corn oil are 440-450. Alternatively, and what I do, go without oil, you'll get enough of it from the meat.
They look amazing. Thanks for the cast iron skillet idea but I think I’m gonna make mine outside on the deck using an electric hot plate and cast iron skillet because it looks like the grease is spattering everywhere and I hate messy cleanups.

2.5 ounces of beef is all you need. The thinner the better. That burger was too big. although it did look good

I use the bottom of my cast iron skillet with parchment paper to press and cook them on a cast iron cooktop 6 at a time. Good times!
